Moore Farms
Orders This Week
Our yummy $20 Farmer Pick box includes some of the last Florida Organic Temple Oranges for the season!
Alright everything went really well this week with harvests and farm deliveries. We were a little short on the Hydroponic Butterhead Lettuce so some of our Farmer Picks got a bunch of Swiss Chard for replacement. If you have not tried this tasty green fresh for salad or on a sandwich, we definitely recommend it! It's almost a 2-for-1 vegetable as the stems can be used the same way you would Celery, raw or cooked. And the Rainbow Chard is so beautiful, too (did you know it's a cousin to Beets?).

Goats in the Mist
Voting for Mama Goat Frida's Baby Goat Name will start this week!
We woke up to thick, thick fog here at Moore Farms Wednesday morning. Here is Mama Goat Frida wondering what is holding up her breakfast bucket!

Foster Mama Hen
There are actually five chicks taking a nap snuggled up under the little Mama Hen's wings!
This is a sweet Farmyard Critter story! We had a very small Buff Orpington chick from the Winter batch. She was getting a little run over by her bigger brothers and sisters especially at the feeder so I decided to put her in with the newest Baby Chicks. Was I surprised to see her immediately take on a Mama Hen role! She mothers all twenty of the chicks, looking after them and they snuggle up under her wings when they sleep. So cute and we're so happy that she has a nice family to take care of now!
From the Farmers
We are very proud to bring our farm harvests to your family's table and we always want to know what you think about what we do. Send us your recipes, pictures and stories and thank you for supporting your local food system!

Weekly Recipe
Our Recipe of the Week is for our own
Cheesy Mac
& Greens
Featured in our Dinner Package!
This is a great way to use leftover cooked Greens too (and maybe get some Good Greens into otherwise non-Green eaters)!

1. Prepare one pound Macaroni or other Pasta of your choice. Toss with Olive Oil to coat and prevent sticking.

2. Wash, chop and saute 1/2 pound Kale with 2T Olive Oil (add finely chopped Onions and/or Garlic if you like). Add water or brother and simmer for 30 minutes or until tender. Pulse cooked Greens in a food processor until just chopped finely, no need to puree unless you are trying to be sneaky for picky eaters. Set aside.

3. In an saucepan make a roux: melt 2T Butter, add  2T Flour, salt and pepper, cook for 1-2 minutes. Whisk in 2 cups milk and stir while cooking over medium heat to combine and thicken cream sauce.

4. Mix together 2T Corn Starch and 1/2 cup milk. Stir this into the cream sauce. The corn starch helps the cheese sauce from getting goopy and gives a smoother texture.

5. Stir in 3/4 pound grated cheese: we sent 1/2 pound each of the Wright Dairy Asiago and Fontina cheeses for the Dinner Package. Reserve 1/4 pound of the cheeses to top the Pasta with.

6. Combine the Cheese Sauce, Pasta and Greens. Pour into a baking dish and top with remaining cheese. Bake at 325 degrees for 15-20 minutes or until bubbly.
