Cheesy Veggie Pasta
A satisfying lunch or dinner, this is a favorite "comfort food" dish on the farm. Choose any shape of pasta, we used Macaroni.
1. Prepare 1 pound of Pasta according to package directions.
2. Wash, trim and chop Broccoli and Carrots into bite-sized chunks. You want at least 2 cups or more according to your preference.
3. Saute veggies with 2 Tablespoons Olive Oil, salt and pepper. Add a chopped onion or garlic if you like. Cook veggies until just tender, 2-3 minutes.
4. In a sauce pan melt 4 Tablespoons Butter, add 4 Tablespoons Flour and stir to combine. Cook for 2-3 minutes, add 1 cup of Milk, Cream or Half and Half, stir and cook for 3-4 minutes or until cream sauce thickens.
5. Mix together the cooked Pasta, Veggies, Cream Sauce and 1/2 cup shredded Cheese. Season with salt and pepper. Pour into a baking dish and bake at 350 degrees for 15-20 minutes or until Pasta is bubbly and starting to brown.
We make a big pan of this Pasta and freeze individual portions to re-heat on busy days! Picky eater tip: puree the cooked Veggies to integrate the good stuff into the sauce!
