Happy New Year, everyone! We had a rather anticlimactic one here at Moore Farms, Will and Laurie both had a nasty respiratory virus so not much on our to-do list got done. At least is wasn't the flu, whew. Hopefully our Members enjoyed some wonderful holiday festing. Now is the time everyone starts getting back to healthful diets and fresh local food! Typically January and February are very busy months for us as folks embark on resolutions and try to make up for holiday indulgences.
Some weeks it's just such a relief when there is so much opportunity for things to go so wrong and everything turns out great after all! After the severe freeze and simply awful harvest conditions we only had a few replacements: Rise and Shine Farm was not happy with the condition of their Lettuces so they sent us their wonderful Salad Mix instead. We didn't have quite as much Spinach as we expected so we sent a Spinach-Salad Mix for Soup & Salad boxes. The Cabbage arrived as Red Cabbage instead of Green Cabbage, which is actually a more nutritious alternative! Prepare the Red variety exactly the same way you would Green for Slaw, Cooked Cabbage, etc. And a few folks got Swiss Chard in place of Collard Greens when we were a little short but overall a pretty great week of local farm crops considering the potential problems!
Our Mama Muscovy Duck has been taking her Ducklings out in the rain and mud, they just love the wet Winter weather!

This is a great way to get an extra vitamin C boost this time of year! We make up a pint jar of this salad dressing and it lasts about 5 days in the fridge. Check out The Atlanta Journal Constitution on January 9th for an article about local Citrus fruit!
Blend together:
Juice from 2 Oranges
1 Tablespoon Honey
2 Tablespoons Rice Wine Vinegar (or another light vinegar) 1/4 cup Olive Oil
salt and pepper to taste
Great options: Add 1/3 cup Plain Yogurt or Mayonnaise for a creamy Vinaigrette; slice more Orange segments and mix with salad green before tossing in dressing for more sunny citrus flavor!
