Our Orders This Week

Our $20 Farmer Pick box this week.
|
We had a great week this week with harvests going pretty well as planned, yay! Despite the shock of Fall suddenly falling down on us we were grateful for cooler temps and actually happy for the rain again. Two farm reports: Black Beans got heavily munched by deer this weekend (boo) and Josephine the Goat's Pregger Watch is still on! Every day we expect it to be the one but so far she continues to confound us so stay tuned to this channel for updates as soon as they become available! ________________________________________
We have to shout out a BIG THANK YOU to Atlanta! You all voted us "Best CSA" again in the Creative Loafing 2013 Best of Atlanta issue (just came out today!). We're thrilled and appreciate your votes very much: there are a lot of wonderful farmers with great CSAs in Atlanta so we are totally honored with the distinction. Cheers, ya'll!

Putting Up Summer Flavor
|
Now is the time to be sure you've got some Summer Flavor put up for Winter cooking! Our fine friends at
The Preserving Place on Howell Mill Road in Atlanta have just opened their doors, offering their own line of preserved products (quite a few with ingredients from our farmers!) and Canning Classes (we're working on scheduling some with them now!). They have all the parts, tools and know-how you need if you want to get into Canning and Preserving.
This week we're offering bulk orders of Sweet Peppers, Tomatoes and Pickling Cucumbers for folks who want to do some "putting up". It's really easy to freeze Peppers and Tomatoes: wash, trim and cut into chunks. Place in freezer zip bags in portions for sauces, stews and casseroles. You can even individually freeze the Peppers for really easy use: after slicing or chopping place on a baking sheet in a single layer and freeze. Put frozen slices into a freezer bag and then take out only what you need to use for a dish.
Quick Pickles
Refrigerator Pickles are really quick to make and while they won't last forever they are a good way to get started learning about pickling. Click here for recipes!

Veggie Stir Fry with Tofu
Our Veggie Dinner Package from this week is one of our favorites, you just can't go wrong with these tasty flavors!
1. Drain and cut Tofu into cubes, set aside.
2. Wash, trim and chop veggies: Pac Choi, Sweet Peppers, Eggplant, Green Beans and Mixed Squash.
3. Heat 2 Tablespoons oil in a wok or skillet, stir fry veggies until tender-crisp. Remove from pan.
4. Stir fry Tofu in 2 Tablespoons oil, fry longer for crispy texture, quickly for softer texture.
5. Add veggies and seasonings back to Tofu in wok and stir fry until combined and heated through. We recommend: 1T Soy Sauce; 1T Fish Sauce; 2T Sweet Chili Sauce; Garlic and Ginger Powder to taste (or fresh if you have them); 1T Rice Wine Vinegar.
6. Wash, trim and chop Cucumbers and Thai Basil, add just before serving with rice or noodles.

Herb Roasted Chicken Dinner Package
A very satisfying meal with the cooler weather.
Thaw and rinse White Oak Pastures Chicken, pat dry. Season bird with salt, pepper and chopped fresh Herbs (we sent Rosemary and Oregano). Roast uncovered in a hot oven (450 degrees) for 10 minutes then turn heat down to 300 degrees. Roast until internal temp is 165 degrees. (Be sure not to overcook pasture-raised meats!)
Prepare sides: Wash, trim and toss Baby New Potatoes with just enough olive oil to coat, season with salt and pepper. Roast for 20-25 minutes at 350 degrees or 35-40 minutes at 300 degrees (in the oven with the Chicken). Wash, trim and chop Green Beans, we steam or boil these, season with salt and pepper and serve with a bit of butter. Slice Tomatoes and serve the meal!
