Moore Farms
Our Orders This Week
Our $20 Farmers Pick box this week.
I suppose we shouldn't be surprised that this week, which not only brings us the sad anniversary of September 11th but also the superstition of a Friday the 13th, we would have a complication or two! Both the Cucumber and Butternut Squash orders did not arrive as expected from the farms yesterday and we were well short on the forecasted harvest of Roma Tomatoes. Apologies all around for those of you who special-ordered the Butternut Squash and Cucumbers: we will replace or credit your next order if you ordered them as Add-On Items or Custom Choice Orders. We were able to substitute with Slicing Tomatoes and Delicata Squash for Farmer's Pick Orders and we had enough Roma Tomatoes for Custom Orders and the Dinner Packages. We are fortunate enough to have very experienced farmer friends who don't often overestimate or miss an item for their delivery. More often than not we see these things happen at the changing of the seasons and, well, that's where we are right now! Thanks to everyone for your understanding, we work very hard to fulfill our Weekly Forecasts but sometimes fresh produce doesn't cooperate with our plans. Otherwise, all went great this week with lots of beautiful and delicious foods coming from our group of farmers.

Pretty Josephine is gonna be a mama!
We had exciting news this week on the Farm: our Goat Josephine is finally getting ready to have her first kid! We really expected her to deliver around the same time as our other doe Frieda, and she has looked pregnant all year. . . but she fooled us! Just a few days ago I saw her udder starting to fill up with milk so it will be anytime in the next couple of weeks for another another Baby Goat, yay! Stay tuned because after we post the Baby Picture we'll ask our Members to vote on a name again for the new Goat.
Josephine is almost as big around as she is long!

Weekly Recipes
Our Recipes this week are for our Pasta Dinner Package:

Baked Pasta with Cheesy Roma Tomatoes
To make Pasta Sauce: in a large skillet or soup pot brown the Sausage with one order of the Roma Tomatoes (washed, trimmed and diced); both orders of Sweet Peppers (washed, trimmed and chopped); Garlic (as much as you like, minced or crushed) and 2-3 Bay Leaves. Add 2 cups liquid of your choice (Red Wine, Chicken, Beef or Veg Broth, Water or combo), season with salt and pepper and Red Pepper Flakes if you like. Cover and simmer for 20-30 minutes.

Assemble Pasta: cook pasta of your choice according to package directions, we usually drain it 2-3 minutes early when we are going to bake it in a sauce. Remove Bay Leaves from sauce, mix together with pasta and pour into a baking dish. Top with grated Wanda (Asiago style) Cheese. Bake for 30 minutes at 350 degrees.

Prepare Cheesy Roma Tomatoes: wash, trim and slice Tomatoes in half. Scoop out the seeds and place in a lightly greased baking dish. Top with grated Wanda (Asiago style) Cheese and seasoned Bread Crumbs (pulse 1-2 slices bread in food processor, season with salt/pepper). Bake at 350 degrees for 15-20 minutes or until browned and bubbly. Serve as an appetizer, side dish or on top of the Baked Pasta!
