Our lovely array of items in this week's $20 Farmers Pick box!
Well, we were really happy to make a special substitution in this week's Farmers Pick boxes: we had an amazing abundance of Wild Chanterelle Mushrooms so we decided to include a pint instead of the planned New Potatoes. Hope everyone is happy with this, the Chanterlelles are a wonderful gourmet item that is a rare treat! Tips for preparing them: the entire Mushroom is edible so just trim off the ends and brush or wash off any dirt then chop the whole thing up. Our favorite way to cook them? Sauteed in a little Butter with salt, pepper and some finely chopped Vidalia Onion. Great to add to omelets, pasta or rice dishes, any recipe you would use Mushrooms in. The color and flavor is just terrific! You can also freeze them after sauteeing to use later. Enjoy!

We steamed the very worst-looking of the Cauliflower from this week's delivery and it was simply delicious!
A couple of other notes about this week's boxes: the Cauliflower from Signal Mountain Farm is not the most beautiful you will ever see but it is delicious so please don't be put off by how it looks! It is a new variety that is supposed to be self-blanching and better suited to Southern growing but the texture is a little different from the Cauliflower we are accustomed to. The Cabbage this week also from Signal Mountain is an Heirloom Arrowhead variety, something you don't see very often!

Weekly Recipes
Our Recipes this week are for a Vegetable Plate you can make with the items in our $20 Farmers Pick box! This is a fun way to enjoy our Farmer's Good Food: sharing a meal with your family prepared with our ingredients. We'll share our own easy tasty ways to prepare Cabbage, Beets, Squash and Salad.

Farmhouse Vegetable Plate
 
Quick Cabbage
     1. Wash, trim and chop 1 head of Cabbage into 1" chunks.  
     2. Trim and chop 1/2 Vidalia or Red Onion. 
     3. In a large cooking pot (like a soup pot) melt 2T Butter, add Onions and Cabbage. Season with salt and pepper. Stir to combine. 
     4. Cook on medium high heat for 5-10 minutes, stir regularly.  
      5. Turn heat down to medium low, cover and cook for another 5-10 minutes or until just tender.

Roasted Beets 
Wash, trim and chop Beet Roots into bite-sized chunks. (Save tops to add to other Greens dishes.) Toss with just enough Olive Oil to coat, season with salt and pepper. Roast in a medium-hot oven (375 degrees) for 20 minutes or until browned and tender.

Simple Squash 
(Laurie's Favorite Vegetable!)
Wash, trim and chop Squash into bite-sized chunks. Chop 1/2 Vidalia or Red Onion. Melt 2 Tablespoons Butter in a large skillet, add Onion and Squash, season with salt and pepper. Saute over medium high heat stirring regularly for 5 minutes. Cover and turn heat off, allow Squash to steam for 5-10 minutes to finish cooking. 

Salad with Cucumber Dressing 
Trim and wash Lettuce, place in Salad Bowl. Wash, trim and grate 1/2 cup of the Cucumber. Mix together 1/4 cup Olive Oil, 1/8 cup Cider Vinegar, season with salt and pepper. Add grated Cucumber and chill. Dress Lettuce just before serving.
