Whew, and what a week it was! Thanks everyone who brought to our attention the troubles with the Checkout function we had on Sunday and Monday, you helped us to track down and fix the problem by Monday afternoon. We had a couple of items arrive not exactly as we had expected: the Celery from Signal Mountain Farm as much smaller than we usually get (variations are always possible!) and Beech Creek Farm's Broccoli was not the most beautiful we have seen but they both taste great so that's the important thing! The other surprise was about half of the Beet bunches from Signal Mountain Farm are the heirloom White Beets: don't be worried about the flavor because they are some of the sweetest Beets we have ever tasted!

Holiday Delivery Schedule
We only take two weeks off all year and one is July 4th! Our Online Market will re-open for ordering on July 4th for July 10th - 12th deliveries. Cheers and we hope everyone has a delicious and wonderful Holiday celebration!

Update on Baby Goat Santiago: he is growing up FAST! He has started to nibble the goat pellets his mama eats though he is still nursing. He climbs on anything he can get on top of and runs around the farmyard racing with the chickens! He is really sweet and friendly, he even wags his tail like a dog when you pet him!

Josephine STILL has not had her baby goat, she gets bigger and bigger every day!
Our WWOOFer Christine was with us for the last two weeks, she is the first British WWOOFer we have had here on the farm. Here she is feeding the Pigs their evening meal. They are growing so fast, they are double the size they were when we got them! "WWOOF" is an acronym for "Worldwide Opportunities on Organic Farms" and we have hosted folks from all over the world! They come for 2-4 weeks to live and work with us on the farm in exchange for their farmstay. Here is Christine with our "Weekend WWOOFers" Jenne and Alex (with Rosco). We had hiked down to the creek on Sunday and that's when we found the Chanterelle Mushrooms. Jenne and Alex are former WWOOFers who live in Atlanta now and will be helping with Farmsitting while we are out of town next week.

Our Recipe of the Week is perfect for the Holiday!
Peach Cobbler
This recipe will serve a polite portion for 4-6 folks or a serious scoop for 2-4.
1. Wash, trim and slice 4-6 fresh Peaches. No need to peel unless you really don't like it, the peel has good vitamins!
2. Butter a pie pan or square baking dish then place sliced Peaches in dish. You can arrange them in a pretty pattern or just let them fall where they may!
3. Sprinkle with sugar to your taste (they don't need a lot).
4. In a bowl combine 3/4 cup flour, 2 Tbs sugar, 1/4 teaspoon salt, and 2 Tbs Butter. Mix together until texture is crumbly.
5. Sprinkle crumb topping over Peaches and bake at 350 degrees for 20-30 minutes or until browned and bubbly. Serve with Vanilla ice cream.
