Our delectable $20 Farmers Pick box this week! 
We hope everyone had a terrific Holiday weekend! Our Spring Farm Day was just about perfect with fantastic weather, a wonderful group of Members and a delicious meal to share together. We'll have a special edition Newsletter with pictures and the recipes from our lunch. Likewise a really nice week for our Online Market orders, lots of great harvests going on at the farms and beautiful boxes being delivered to our Members.

We are happy to announce the winner of our Baby Goat Name Contest: it was a close vote but "Santiago" won in the end! Many thanks to Member Kesa Johnston Dunn who suggested this name and everyone who sent us names to vote on at our Spring Farm Day.

"Chocolate" sent in by Member Sue Lin Yee's daughter Zara was a very close second with "Pepper" and "Sunny" (both from Member Jana Jopson) and "Friday" (Member Julia Powell) all tying for third.  
Sweet Pea on Guard Duty
One of our wonderful farm doggies, Sweet Pea is very protective of the Baby animals around here! She is fascinated by Baby Chicks and will actually sit for hours watching over them. She is very, very sweet: she would never hurt them and she knows they are our babies. Today our 12-day-old Baby Chicks had their first Field Trip out into the big world. The bounced around in their "Chick Condo" and enjoyed tasting grass, clover and chasing flies and bugs. We have put together different boxes so they have one box for a Dining Hall with openings into their Living Room Box and additional doors out to two different Sun Rooms like the one you see here. The wire box keeps them safe inside so they can't run all over the place and gives Sweet Pea a chance to do what she does best. Our next batch of Chicken Eggs is due to start hatching on Sunday, we have 24 Blue Eggs in the incubator!

Weekly Recipe
Our Recipe of the Week is for our Pasta Dinner Package

Pappardelle with Oxtail Ragu & Salad
Package includes: Storico Fresco Pappardelle Pasta; Cedar Springs Farm Oxtail; Vidalia Onion; Lettuce; Cucumber

To prepare Oxtail Ragu: 
Season Beef with salt and pepper, allow to rest and come to room temperature while preparing the braise. Trim and chop Vidalia Onion, saute with 2T Olive Oil, salt and pepper in an iron skillet or large cooking pot (ovensafe and with a lid). Add Oxtail, brown on both sides with the Onions. Add 1 large can Diced Tomatoes and 1-2 cups Red Wine (to your taste), stir to combine. Cover and cook for 2-3 hours. Meat should be very tender and falling off of the bones. Allow to cool, remove meat and marrow from the bones and mix well with braising sauce. The Ragu is essentially done at this point, if necessary add a little more Olive Oil, Red Wine or Diced Tomatoes to loosen up the texture (it will be fairly thick).  
 
Prepare Storico Fresco Pappardelle Pasta according to pkg directions.

While Pasta is cooking prepare simple Salad: Wash, trim and chop Lettuce and Cucumber, toss with your favorite Vinaigrette or dressing just before serving.

When Pasta is done combine with Ragu, allow to rest for 2-3 minutes so Pasta can inhale some of the sauce flavors, serve with grated Parmesan or other hard cheese.
