Such a pretty array of vegetables from the farms this week, lots of color and texture to go with the delicious fresh flavors! Want to try the Radishes from 4G Farms in a new and different way? Try cooking with them: if you think of them as if they were Carrots they are really pretty versatile. One of our favorites is simply sliced sauteed in a little butter with the English Peas, yum!  | |

A Tale of Three Peas
OK so we had a lot of fun keeping track of the three different types of Peas this week! In case you're wondering the pic at left shows a Sugar Snap Pea, Snow Pea and English Pea in that order. The first two are both edible pods so if the Sugar Snap or Snow Peas were part of your order simply wash, trim the stem ends and enjoy raw or lightly cooked. The English Peas are still in Mother Nature's package so you will have to take a few minutes to pop them out of their pods. One trick for these we discovered last Spring is that if you run out of time to prepare them you can freeze them right in the pods and shell frozen when you're ready to use!

We were super geeked to find our Moore Farms and Friends Online Market profiled in the May issue of Atlanta Magazine! Their food writers reviewed five of Atlanta's top CSA Programs and well, we look pretty darn good! The Farm
We have Farm Animal babies all over the place right now! The 7-week old Piggies are just a joy to watch as they have recently discovered what fun rooting around in the dirt is! They also have a posse of Chickens following them around waiting to scratch up their freshly tilled earth for bugs and worms. One of our Mama Ducks is sitting on a nest of eggs, we have Baby Chicks hatching every day in the incubators (follow along with our Facebook postings as they hatch!) and at least one of our Goats, Frieda, is expecting a baby, too! We had a terrific group of kids and moms out this past weekend for a private Farm Day and we had a great time preparing another batch of Chicken Eggs for the incubator, we dug Carrots for lunch, fed all of the Farm Animals and enjoyed a great day in the Farm. These are all recipe suggestions sent to us by Members, some recently and a couple from awhile back. Hope you enjoy!
Sweet Potatoes
Many thanks to Member Derek Eiler who sent us this great site, we especially love the Sweet Potato Hash, we make it with Poached Eggs! If you can't find a new exciting way to prepare Sweet Potatoes here then you are one picky eater:
45 Delicious and Healthy Sweet Potato Recipes Orange Cashew Pork
This one is from Member Melissa Marshall, thanks so much, it's super tasty and easy!
1. Slice into strips 1 Pork Chop per person and marinate in 1T Soy Sauce, 1T each fresh grated Ginger and Garlic and 1t Cayenne or Siracha. 2. Prepare Rice. 3. Heat a little oil in a skillet, drain Pork Chop Strips and dredge in flour. Fry on medium high heat until browned, set aside. 4. Add 1 cup Orange Juice and 2T Honey to pan drippings in skillet, cook until reduced by half, about 15-20 minutes. 5. Toast Unsalted Cashews in oven, be sure not to burn.
To serve toss Pork with Orange Sauce and Cashews, serve with rice and any stir-fried Vegetables from this week's box.
Cucumber Sandwiches
Long time Member Marguerite Lane sent us this one last year, she is enjoying a break right now with her newborn so we wanted to give her a shout out with this tasty sandwich recipe.
4 oz cream cheese or Goat Cheese (can also be neuchatel or (vegan) cream cheese)
1/3 c vegan mayonnaise
1/3 c watercress leaves
1/4 c green onions, sliced
1 T lemon juice
2 t fresh dill
1/4 t white pepper
pinch of salt
12 slices whole wheat bread
thin slices of cucumber
shredded carrots
thin slices of radish
radish sprouts
(You can leave out the watercress and sprouts; they're not necessary.)
In a food processor or blender combine cream cheese, mayonnaise, watercress, parsley, green onions, lemon juice, dill, white pepper, and salt and process until smooth. Transfer to a glass bowl and chill for 20 minutes. For each sandwich, begin by spreading 2 T of herb cream cheese mixture on 2 slices of bread. Then on one slice layer: 8 slices of cucumber, 3-4 T shredded carrots, 12 slices radish, 3-4 T sprouts, Place the other slice of bread, spread side down on top, cut into 4 triangles, secure with toothpicks.
