Orders This Week
Our $20 Farmers Pick this week! 
Alright, we had a couple of unexpected events this week with our orders. . . the Sweet Potatoes arrived from the farm as regular Potatoes, the result of a communication error.
We made sure we had enough Sweet Potatoes for the Custom Choice Orders (if we are ever short on 
Bordeaux Spinach 
something the Custom Choice Orders get filled first!) so the Farmer's Picks got regular (Irish) Potatoes instead. The Spinach this week from Beech Creek Farms is the beautiful and delicious red stemmed "Bordeaux" variety. With the recent rain the fellows over there wanted to be sure the Spinach was clean, so they washed it twice, and, well, it got a bit crumpled up. It's not as pretty as usual but still wonderful: we recommend cooking with it, maybe a soup or quiche. We were a bit short on it for orders so some folks got Broccoli instead of Spinach. Sigh. Oh how we treasure those weeks when everything goes just as planned!

We hear all the time from folks who wish they could grow more of their own food and dream of someday growing enough to sell to others. We know how you feel, we have been in that place! Member Elles Taddeo sent us this announcement to share, who knows, maybe one of you will be ready to take on a small fruit operation in Snellville, GA! "My mini farm is for sale, it has 3.27 acres (with) muscadines, scuppernongs, figs and vegetable gardens. We had such a great crop of everything last year, I have never seen so many scuppernongs. Tips for New "Localvores"
Involving the kids in our Weekly Farm Boxes helps to get them interested in the food inside! We encourage

Whether you are new to the Local Food Movement or a Longtime "Localvore" here are our tips on how to incorporate our farmer's Good Food into your diet and encourage interest at the dinner table!

1. Highlight Local Foods in One Meal 
    Try preparing one meal a week with only local ingredients. Looking for recipe ideas? We archive our Weekly Newsletters and sort them by the Recipe so you can browse through easily. Steer the dinner conversation around what the ingredients are, who grew them, how and where they were grown, etc.

2. Spread That Ingredient Around 
    Some folks think that if we send out a bunch of Kale
in the Farm Boxes they are supposed to sit and eat a pile of plain old cooked Kale, boring! Here at the Farm we take one item and put a little of it into a lot of different dishes. A few leaves will go into quiche or omelet, a few into soup or salad (Kale is great in salad!) and a few go into a pasta or rice dish. Much more interesting!

3. Hide and Seek
    If you have picky little eaters (or picky big eaters) you can use these ideas to sneak veggies into meals and reveal the ingredients later (after they decide they love it). Soups: Finely grate veggies they don't like, they will "melt" into the background (terrific for Turnips). Sauces: Sautee and puree a mix of veggies until smooth, use for Pasta, Pizza or Meats. Stir Fry: Cut up several vegetables into the same size shapes. If Carrots and Rutabagas are both the same size and shape in a stir fry dish they are likely to get gobbled up before they realize it!

Weekly Recipes
For this week's Soup & Salad Package: 

 

Hearty Vegetable Soup

Ingredients: 

Dried Beans

Mixed Roots

Mixed Greens

Green Onions

Rosemary

Rinse Dried Beans, remove any bits of dried pods, etc. and soak overnight. The next day rinse again and place into a soup pot. Wash, trim and chop Vegetables and Herbs. Place into soup pot, add 4-6 cups liquid (Chicken, Beef, Mushroom or Vegetable Stock, we like Imagine brand!), season with salt and pepper. Bring to a boil then turn heat down and cover, cook on low for 30-40 minutes. The longer you cook the soup the richer and thicker it will be. Leftovers are fantastic! Check and adjust seasoning. 

 

Apple Pecan Salad

Ingredients: 

Lettuce

Apples

Cracked Pecans  

Sort Pecans, place in a single layer on a baking sheet and toast for 10 minutes at 300 degrees. Allow to cool. Trim and wash Lettuce, place in serving dishes. Wash, trim and chop Apples into bite-sized chunks or slices. Prepare vinaigrette or use Salad Dressing of your choice, mix with Apples and Pecans, place a scoop on top of the Lettuce and serve.

Beech Creek Farms grows our Popcorn for us and we are so happy to have it. The flavor of fresh Popcorn is really different from the packaged corn you buy in the store: and ours is still in Mother Nature's package! Here's how to enjoy your Popcorn:

1. You can pop it on the cob if you use a microwave. Place the whole cob in the paper bag we sent it to you in and microwave on high until the popping rate slows (like the packaged bag popcorn directions).

2. We recommend removing the kernels and popping the old-fashioned way in a covered pot on the stove. The kernels are easy to remove (see above) with your thumbs, do this over a bowl so they don't get away from you. Put 2 teaspoons oil in a large pot, heat on medium high heat on the stove and add kernels (when the pot is heated). Cover and shake/agitate the pot to keep the kernels moving so they don't burn. You'll get most all of the kernels to pop if you are using fresh Popcorn.

Hints: We add some salt to the oil  before popping and you can flavor with seasoned salt, paprika, cumin, etc. immediately after the corn has finished popping. Also if you don't use your Popcorn right away store it in the paper bag in the fridge or freezer.
