Rain rain, go away. . . well, OK we really do need it but we have had fourteen measured inches in the last six weeks! Just getting a little lonesome for some sun. One note about the Tuscan Kale in this week's orders: some of the Kale is still on the small side so yours might be bagged loose Kale or you might have a bunch of compact leaves. The bunches look small until you get ready to prepare them, then it's easy to see they are a full half-pound order! Check out the super easy recipe for Mixed Greens this week, it's sure to please even non-Greens eaters. I had to share a photo of the first budding Daffodil of Spring: we have banks of these pretty old-fashioned bulbs all over the place. Just hoping they don't get frozen in the next few weeks! We're excited to have a night out in  Atlanta this weekend as one of our favorite singer-songwriters Fred Eaglesmith is coming to Eddie's Attic (there are still tickets if you want to enjoy some great "Americana" music from a veteran musician and his band). Check out the Upcoming Events to our website and we'll be adding events for 2013. Host an event of your own! If you have friends and neighbors you think would be interested in becoming Members of our Online Market we can come out and have a meet and greet at your home or office. We have had some interest this year from companies that are offering "Health and Wellness" incentives to their employees: if you have a group at work and want to try our Moore Farms and Friends program let us know! Some folks are finding they can apply company incentives to our Online Market orders and we can look at adding your office as a Pickup Location, too. Also we have a great new idea coming from a church group in our Birmingham area: they are sponsoring Farm Boxes for underserved families in their communities. Let us know if you are interested in something like this, it's a great way to share the love of fresh local organically grown food with those who might not otherwise have access to it!

Good Agricultural Practices

This week there was a lot of news reports about the FDA's new Agricultural Guidelines developed to help limit the instances of food contamination. We have anticipated these new rules (GAP: Good Agricultural Practices) for some time as they have been working on them for a few years now. While the guidelines are primarily for large-scale farmers (annual sales of $500K or more, no one we know!) the basic rules are ones all of our farmers are already well aware of. The primary cause of most fresh produce contamination is raw manure from any source (livestock, human, wild animals and birds). Many of the farmers Moore Farms and Friends work with use composted manure for fertilizer and have some livestock so cross-contamination is something we think about all the time. Good Agricultural practices include hand washing, field washing of produce and keeping livestock out of active produce growing areas. Please remember to always wash your produce before consuming! We do not offer any fresh produce that have been pre-washed or is ready to eat. If you or a family member is elderly, ill or otherwise has a compromised immune system we recommend soaking fresh produce in a 10% White Vinegar solution (9 parts Water, 1 part White Vinegar) for 10 minutes then rinsing well with clean Water. This will take care of most any contaminants that might possibly be hanging around though in the conventional farming world a bleach solution is used. Most of the GAP Guidelines are truly common sense!

Pork Roast Dinner Package Recipes
Pork Roast w/Rosemary
Thaw and brine Pork Roast for 24-48 hours (brine: 1/2 cup salt and 1/4 cup sugar dissolved in 1 gallon water). ~ Remove from brine solution and discard, pat dry with paper towel. ~ Rub with olive oil, salt and pepper, chopped fresh Rosemary and Garlic if you like. ~ Roast in a 300 degree oven until internal temperature of 140 degrees (about 45 minutes to 1 hour). ~ Allow to rest before slicing to serve.
Roasted Mixed Roots
One of the special items we're known for, we have different mixes of Roots depending on the season! Wash, trim and chop Mixed Roots into bite-sized chunks (no need to peel). Toss with just enough Olive Oil to coat, season with salt and pepper. Spread in a single layer on a baking sheet and roast in a 375 degree oven for 10-15 minutes or until browned and crispy.
Sauteed Mixed Greens
Will's new favorite Mixed Greens combines Collards and Cabbage. The Cabbage lightens the texture of the Collards and gives a sweeter flavor. Wash, trim and chop 2 cups of Collard Greens and 2 cups of Cabbage. Slice 1 medium white onion thinly. Sautee Greens and Onion in 2T Olive Oil, Butter or Bacon Fat, seasoning with salt and pepper, until wilted. Cover and turn off heat until ready to serve.
Mom's Favorite Apple Cake
Laurie's mom Linda found this recipe and prepared it for Christmas, Will went crazy for it! Terrific with our local Apples and very easy to make even if you're not a baker.
