We hope you like our freshened up Newsletter format, we are working on our new website and hope to have it ready to launch later this Spring! 2013 is already a busy year for us as we wrap up renovation projects on the farm. The Corncrib Cabin is nearly complete and the bathroom in the Farmhouse will be ready for visitors next week! We have already started to add Upcoming Events to our website so check those out and we hope to see you here at the Farm very soon.

All went great for the first farmer check-in of the year and we're getting great reports from everyone about how crops are growing well. The warm weather this week should get plants zooming, Spinach, Carrots, Brussles Sprouts, Kale Kale and Kale are all revving their little botanic engines here at Moore Farms! The Chickens and Ducks had a Christmas Day treat when I opened up the first of their Winter Clover and Rye Grass sections, they had a ball for two weeks feasting on their "salad bar"!

All About our Farmer's Eggs
We now have eight Farm Egg producers! The increase in producers means we will have a better supply (we sell out at least 50 dozen per week in the Winter). It also means we wanted to set new production standards so we can assure our Members about how our Chickens and Ducks are cared for. Moore Farms recently had our first Animal Welfare Approved inspection. This fine organization helps farmers and their eaters to know and understand about healthy farm animal welfare. By Summer 2013 all of our Egg Producers will be required to become Animal Welfare Approved. While we still do not have a local source for Certified USDA Organic or even Certified GMO-free feed we do have a comprehensive system that all of our farms are now using. Our Poultry feed is an equal mix of Southern States Layer, Southern States Super Breeder and locally milled 9-Way Scratch Grains. This mix ensures proper nutrition and includes Pro-biotics, Omega-3s and special additions like marigold flower petals. None of our producers ever uses antibiotics or other medications for their laying flock (any birds who are injured or ill are separated from the flock). Also we hope to have a local source for Certified GMO-free feed this year.

Weekly Recipe 
Stir Fry Package
We offered our Stir Fry Package this week with Vegetarian or Meat options!
    
1. Prepare marinade for Pork or Tofu: mix together 2 Tablespoons each Soy Sauce, Fish Sauce, Sweet Chili Sauce, Rice Wine Vinegar. Add 2 teaspoons each grated (or dried ground) Ginger and Garlic, Cumin and Sugar. Reserve half for the Vegetables.
    
2. Cut Pork into strips and/or Tofu into cubes and marinate in the other half of the marinade for 1 hour.
    
3. Wash, trim and chop vegetables: Broccoli (with stalk); Green Onions (with tops); Bell Pepper; Sweet Potato (we like these cut into matchsticks like Carrots). Slice Cabbage thinly for Vegetarian package, up to 2 cups (or more if you like!).
    
4. In a wok or skillet heat 2 Tablespoons Vegetable or Peanut oil on medium high heat, stir fry veggies (start with Sweet Potato and end with the more delicate ones like the Green Onions). Add reserved marinade mixture at the end. Remove to a serving Dish and wipe wok clean.
    
5. Heat another 2 T Oil and cook Pork or Tofu until just done, add to Vegetables.
    
6. Serve with fresh chopped Cilantro and prepared Rice or Noodles.

We also like to top with chopped Peanuts, Cashews or Sesame Seeds.
