Our Orders for the Last Week of the Year!
All-righty-then, wrapping up the end of 2012, the last orders going out this week. . . it's always a big thing for us to get to this point in the year! Now we can reflect on the past 12 months and start our plans for 2013. Justin has been working on the preliminary seed orders and we have a lot of seeds we saved again from this year's crops. We're excited about the New Year, this time for reflection and planning is very important for us. Also, we can't just take two weeks off: we hope to wrap up the Corncrib Cabin renovation as well as rip out and redo the Farmhouse Bathroom, the last big project in that building to get done! Only one item didn't come in as planned this week, the "Red Russian" Kale we had ordered arrived as "Red Curly" Kale. This variety is plenty delicious and actually has more green for the leaf. We hope you like it, check out this Crispy Kale Salad with Lime Dressing recipe from Bon Appetit magazine for a delectable way to enjoy this great green!

Weekly Recipes

Soup & Salad Package Recipes:
~ Will's Farmhouse Chili ~ 1. Soak Mixed Dried Beans overnight (we sent our Pintos and Black Beans). 2. Brown 1 pound Ground Beef with 1 Tablespoon Olive Oil, salt, pepper, chili powder, garlic and cumin. 3. Wash, trim and chop Mixed Roots (we included Green Onions, Baby Carrots, Baby Turnips) and 1 Bell Pepper. Saute in 1 Tablespoon Olive Oil, season with salt and pepper. 4. Mix together the Ground Beef and Vegetables, add (1) large can Diced Tomatoes, 2 cups of Beef Broth, (or Vegetable/Mushroom Broth) 1 Beer (Will prefers Guinness). 5. Simmer for 1-2 hours, adjust seasonings if necessary (Laurie adds Red Pepper Flakes!).
Don't worry about the veggies in the chili if you have have folks who won't otherwise eat them, they "melt" down and won't be noticeable. If you have big-time veggie non-eaters you can also puree them after sauteing.
~ Salad with Cucumber ~
Trim, wash and arrange Lettuce and Cucumber on serving plates, dress with vinegar and oil or your favorite Atlanta Fresh Dressing. ~ Cornbread ~ Preheat oven to 400 degrees. Mix together 1 cup Cornmeal, 1 cup All-Purpose Flour, 4 teaspoons Baking Powder, 1/8 cup Sugar, pinch of salt. In another bowl blend together 1 cup Milk (or Buttermilk) 1/2 cup light Olive Oil or Vegetable Oil and two Eggs. Mix wet and dry ingredients, pour into an oiled cast iron skillet or buttered baking dish, bake for 20 minutes or until toothpick inserted in center comes out clean.
~ Baked Apples ~
Wash Apples, cut in half, trim stem ends and remove cores. Place face-down in a buttered baking dish, pour 1 cup Apple Juice, White Wine or water (or a mixture) over all. Sprinkle with 2 Tablespoons Sugar. Bake at 400 degrees for 15-20 minutes or until tender. Serve with vanilla ice cream!
