Though this winter has been mild compared to some, I am as excited as ever as I bask in the thought of "SPRING" just around the corner!  I can already smell in my mind the earthy aroma of topsoil, the freshness of those first blooms, and, believe it or not, I'm actually excited to pluck those first pesky weeds out of the ground. 

  

Last year, we modified our newsletter to include one of our favorite recipes, highlight a current or upcoming event, share what the crew is up to, and also include a bio about one of our staff members.  We received great feedback, so this year we will continue in the same pattern but we also include a coupon for those of you that read all the way to the bottom.  If you have thoughts, ideas or suggestions for us, please don't hesitate to contact us and give us your feedback.

  

Our first event this season is a 3 day winter clearance sale followed by several planting events.  The sale is on overstocked items, discontinued inventory, and a variety of gift items that we want to clear out...you can save 30-75%, so don't miss this opportunity just in time for Valentine's Day!  Our planting events are in mid-March for those of you that may have worked with Holasek's in the past to plant your annuals and have them grown on until early May.  Our event isn't exactly the same, but we think it is actually a bit easier and less cumbersome for all of us...call for details and to sign up as our space is limited and we will likely turn latecomers away.

  

With Valentine's day just around the corner, buying a gift during our sale or purchasing a spot at our growing event is a great way to show your love to your significant other, a family member or friend, and even yourself...we hope to see you soon! 

  

As I reflect on Valentine's day, I can't help but think of my greatest lover of all, and He's yours, too!  Yes, whether you know it or not, Jesus is the greatest lover any of us will ever meet.  He loves you so much that He lived for you, He died for you, He rose again for you, and He will return for you!!!  If you haven't met Him yet, we would be humbly honored to introduce Him to you.  Truthfully, He already knows you, in fact, He knitted you together before He even created this world...and He's anxiously awaiting your acceptance of His proposal to be your Valentine forever!

  

My prayer for all of us is that we accept His invite, or that we "refresh" His invite, that we embrace the fact that in Him we live and move and have our being, that we no longer live, but that He lives in us...O may it be so!!!

Does your heart beet healthy?
 
 
 

Why we love them: Beets are an earthy, sweet treat. And don't forget to eat the beet greens too-baby ones are delicious raw in a salad; cook more mature ones as you would chard or kale.

What you get: 1/2 cup of cooked beets has a mere 29 calories but boasts 2 grams of fiber and provides 19 percent of the daily value for folate, a B vitamin needed for the growth of healthy new cells. Beets' beautiful color comes from betanin, a phytochemical that's thought to bolster immunity.

In your garden: You can plant your beets as soon as your soil can be worked in the spring.

 

Sometimes beets in the market have beautiful, unblemished, tender greens attached. When that happens, blanch the greens and toss with beans and vinaigrette, using some of the beets to garnish the salad, as in this recipe. Use the leftover cooked beets for other dishes. If you buy beet greens on their own, you can make the salad just with them. Either way is delicious. (www.gardeners.com)

  


 

Beets & Greens Salad with Cannellini Beans

 

  

INGREDIENTS

  • 2 bunches beets with unblemished greens, or 8 cups lightly packed beet greens
  • 2 cloves garlic, crushed and peeled
  • 1/2 teaspoon salt
  • 3 tablespoons red-wine vinegar
  • 1/3 cup extra-virgin olive oil
  • 1 teaspoon dried oregano, or 2 teaspoons fresh oregano leaves, minced
  • Freshly ground pepper, to taste
  • 1 15-ounce or 19-ounce can cannellini beans, rinsed
  • 1/4 cup thinly slivered red onion, (1/2 small onion)

 

PREPARATION

  1. If using beets, preheat oven to 400°F. Cut greens from beets, leaving about 1 inch of stem attached; reserve about 8 cups greens, lightly packed. Wash and dry the beets. Wrap in foil and roast until tender, 1 1/4 to 1 1/2 hours, depending on the size. (Alternatively, place beets in a microwave-safe dish, add 1/4 cup water, cover and microwave on high for 20 to 25 minutes.) When the beets are cool enough to handle, peel 4 of them and cut into 1/2-inch wedges. You should have about 2 cups. Place in a medium bowl. (Reserve the remaining beets for another use.)
  2. Using a mortar and pestle or the side of a chef's knife, mash garlic and salt into a paste. Transfer to a large bowl. Add vinegar and whisk to blend. Add oil, oregano and pepper, whisking until blended. Measure out 1 tablespoon and add to the beet wedges; toss to coat. Add beans to the remaining dressing and toss to coat. Let marinate at room temperature until ready to use.
  3. Place onion in a small bowl, cover with cold water and add a handful of ice cubes; let stand for 10 minutes, or until ready to use.
  4. Meanwhile, bring 2 cups lightly salted water to a boil in a large wide pan. Wash beet greens in several changes of water; trim the stems. Add the greens to boiling water, cover and cook until tender, about 5 minutes. Drain well, pressing on the greens with the back of a spoon to remove excess moisture. Cut into 1-inch pieces.
  5. Drain the onion. Add to the beans along with greens; toss to coat. Spoon the salad onto a serving platter or individual plates and garnish with the beets, if using. Serve immediately.

TIPS & NOTES
  • Make Ahead Tip: Prepare through Step 1, cover and refrigerate for up to 2 days.
  • Soaking the onion in ice water for 10 minutes or more renders it less pungent and more crisp.

Plant & Grow Workshops


 

3 workshops to choose from:

These workshops will provide you the opportunity to get a jump start on your spring baskets.  The workshop will start with a brief talk on the exciting plants from which to choose along with planting advice.  Then you will create your own custom hanging basket. The basket options below are common sizes to fit right in most planters or pots.  We will keep them pampered in our greenhouse until May 10th, Mother's Day.

2 options:
  • 12" green plastic hanging basket (hang or drop into your own planter) $45/ea.
  • 16" decorative coco wire hanging basket $65/ea.

(fee includes the basket, soil, plants, and our TLC)
