COMMUNITY COOKS

 

Basil Tree is committed not only to environmental sustainability, but also being a positive influence on our community. Helping us with this goal is Community Cooks. They pair individuals and businesses with charitable organizations that need help feeding the populations they serve.

 

We help by providing lunch once a month to a group of students participating in an after school tutoring program. Many of these students would otherwise go without lunch and we're glad to be a small part in changing that.

COMMUNITY SERVINGS

 

This will be our 20th year baking pies and our 4th year selling them for Pie in the Sky! We're looking to break our previous record of 250 hand-made pecan pies from last year. This effort is to raise money for Community Servings, a local charity that prepares and delivers meals to critically ill, homebound individuals and families throughout Massachusetts.  Each year some of the best restaurants and bakeries in the area donate pies so that you can buy one!  The proceeds from one pie will feed an ill individual for an entire week!

 

Purchase a pie and pick it up at one of the many locations around the city the day before Thanksgiving (sorry, we can't guarantee that the pie you'll get will be a Basil Tree pie).

 

Cranberry White Chocolate Chip Blondies Recipe
1/2 pound      Butter (room temperature)
3/4 cup          White Sugar
3/4 cup          Brown Sugar
2 each           Eggs
1 Tbl              Vanilla Extract                 
2 1/4 cups      White Flour
1 tsp              Baking Soda
1/2 tsp           Salt                                 
1 cup             White Chocolate Chips
1 cup             Dried Cranberries             
1/2 cup          White Chocolate Chips (top layer)
1/2 cup          Dried Cranberries (top layer)

Preheat oven to 350F.

Cream butter in mixer until soft. Add the sugars, blending well. Add in vanilla, then add eggs slowly and beating one egg at a time.

Whisk dry ingredients together in a separate bowl, and then add to mixer, mixing until blended. Mix in chips and cranberries on low until blended in.

Prepare 9X13 pan with spray oil and parchment if desired. Spread batter into pan. Sprinkle evenly with chips and cranberries for garnish.

Bake for 35-40 minutes or until golden brown and firm to touch. Let cool and cut into squares. Can be frozen in advance.
