One of our wonderful dishwashers, Marie received her US Citizenship this month, a cause for celebration!
We said goodbye to Lauren, who worked in our cafe & will be missed. She is off to pursue a career in nursing.

From Our Kitchen to Yours:
Two Bean Vegetarian Chili

yield: 3 lbs, serves 4 to 6 people

2 T Canola or Olive Oil 1 tsp Crushed Garlic 1 cup Onions, chopped small
3/4 tsp Chili Powder 1/8 tsp Cayenne 3/4 tsp Cumin 1 tsp Salt 1/4 tsp Pepper
16 oz can Pinto Beans 16 oz can Black Beans
16 oz can Crushed Tomatoes 1 cup Green Peppers, cubed into very small squares 2 cups Frozen Sweet White Corn Saute onions & garlic in oil for 5 to 10 minutes until soft. Add seasonings for a few minutes. Add the rest of the ingredients and simmer for 20 minutes before serving. Can be stored in fridge or freezer before reheating. Enjoy with grated cheddar, sour cream and/or cornbread!
