Antioxidants & Oxymorons....
Free Radicals & Radical Changes
As I wind up my blog series on The Chemistry of Aging, I am musing about the oxymorons we encounter every day on food labels:
The irony is that these supposedly "healthy" ingredients are contained in highly processed foods which are major culprits of free-radical production in the body.
Fat-free: Hydrogenated, chemical-laden fats are "bad" fats, but naturally-occurring fats such as saturated fats (coconut oil, avocados, meats), polyunsaturated fats (Omega's 3 & 6) and monounsaturated fats (olive oil) are essential to our health-- we need fats for healthy nerve, brain, and hormone function!
Natural Flavorings & Colors: Disgusting as it sounds, crushed insects and glandular excretions from animals are sometimes used to flavor and color our foods. Examples: Red No. 4 (carmine) is made from the cochineal insect, and a natural flavoring commonly used to sweeten inexpensive brands of ice cream is extracted from the anal glands of the civet cat. Proof that "natural" isn't necessarily healthy! After all, arsenic is "natural" too!
Low calorie: Translation: "Heavily laden with chemical substitutes for sugars and fats."
Sugar-free: Laced with chemical sweeteners, including Splenda (sucralose), which is effective as an insecticide, but marketed to humans as a sweet-tasting sugar alternative, and NutriSweet (aspartame), an excitotoxin that stimulates brain cells to death. We use both of these items to take care of unwanted pests around our house!
Enriched/ fortified: Translation: "We take out all of the naturally-occurring, organic vitamins and minerals, then we add in chemical, laboratory-formulated substitutes, because we have found a way to improve upon what G-d has created."
This is an oxymoron, alright! So, I am putting out a challenge for us to radically change our concept of what "real food" is vs. what is labeled as "food" on grocery store shelves. It is time to take back our health and stop swallowing false advertising about what is "healthy!"

Thai Summer Salad with Peanut Sauce
|
Combine in a large bowl:1 small cucumber or zucchini, very thinly sliced 1 c. shredded carrots 1 large red pepper, julienned 1/2 c. fresh cilantro, chopped 8 oz. fresh bean sprouts 2 c. chopped Napa cabbage 2 c. chopped green or red cabbage 4 c. Romaine or other leaf lettuce, chopped 4 green onions, sliced 1 baked/ rotisserie chicken, shredded Toss together with Shanita's peanut sauce:1/2 c. peanut butter 1/2 c. water 1/4 c. soy sauce 4 cloves of garlic, crushed 3 T. lemon juice (or lime) 3/4 t. ginger, fresh, ground 1/4-1/2 t. crushed red pepper Yield: 12 servings
