Broiled Eggplant with Goat Cheese and Tomato
Following is an eggplant recipe my wife Margaret made recently. Eggplant is low in calories and filling. It is not famous for high nutrient sources but can help keep your calorie intake down. It has a meaty texture and the skin is purple so there are some antioxidants present.
Directions:
- Take One Eggplant-slice it in 1/4 inch slices
- Set broiler on high.
- Brush olive or peanut oil on one side (broiled, top surface) Salt and pepper lightly. Broil for 4-5 minutes.
- Turn slices over, again brush lightly with oil, salt and pepper lightly and broil an additional 4-5 minutes.
- Add crumbled goat cheese, chopped herb such as basil or even sundried tomatoes and place in oven another 1-2 minutes until cheese melts.
Enjoy, doctor tasted and doctor approved!
