The Art of Granola
 

Homemade granola is an easily solution to finding a fun, healthy, portable snack that can increase your fiber intake and boost your antioxidant levels.  This recipe breaks down granola into 4 categories: oats, nuts/seeds, dried fruit, and a combining substance.  

 

Once you know the categories, you can play around, mixing and matching your favorites from each category to create your healthy snack.

 

GRANOLA


Start to finish: 20 minutes
Yields: 3 cups
1 cup rolled oats
1/2 cup dried cranberries
1/4 cup (5 or 6) figs, chopped
1/2 cup walnuts
1/2 cup shredded coconut
2 bananas, mashed
1 tablespoon vegetable oil
1 tablespoon honey
1/4 teaspoon vanilla
1 teaspoon cinnamon
1 tablespoon brown sugar

 

Preheat oven to 300 degrees.

 

Combine oats, dried cranberries, figs, walnuts and coconut in a large bowl. In a separate bowl combine the remaining ingredients. Then combine the banana mixture with the dry ingredients.

 

Layer the granola onto a baking sheet. Bake for 20 minutes or until oats reach a light brown color.
