"Patrick Bize is the proprietor of Domaine Simon Bize and a stalwart amongst the Burgudian elite - or as the French are fond of saying, he is an "incontournable," which means an "absolute must."
The first Bizes to arrive in Burgundy came from the Savoie in the early 1800s. Patrick became the fourth generation of his family to preside over the family property, albeit a bit reluctantly.
Patrick is a spare, laconic gentleman - long answers are not part of his personality and one gets the sense that his energy goes into viticulture and vinification.
There are 52.8 acres to care for and it seems that Patrick knows every inch. Patrick is a traditionalist - he doesn't do anything cutting-edge in the winery and his yields are well below the legal limit. He'll wait for the fruit to reach optimal ripeness, even if that means risking his crop.
Patrick treats his wines as delicately as possible and they clearly benefit from his careful attention.
