What's So Good About Oats?

The medicinal value of oats has been recognized and documented for thousands of years. Dating back more than 2000 years ago, records describe oats as a "healing agent, desiccant for the skin, a cough reliever, and a natural food for horses, that was used by humans when resources were scarce".  Prior to the 19th century, the only areas where oats were a significant part of the human diet were Ireland and Scotland. It is the Scottish settlers that are credited with bringing "oatmeal" to North America, but it was a German immigrant that brought it from the medicine cabinet to the table as a popular breakfast cereal with its "stick to your ribs" reputation.

If you've ever made a warm bowl of oatmeal for breakfast, you have most likely experienced its gooey, gummy texture. The gumminess comes from, a soluble fiber found in oats, known as beta glucan. While all whole cereal grains contain both soluble and insoluble fiber, oats (and barley) are higher than most in beta glucans.

Numerous studies show that the beta glucans found in oats and barley, help to lower cholesterol, improve insulin response, boost the immune system, reduce the risk of infection, and restore the activity of the friendly gut organisms.

In addition to the healing qualities of oats, they are a delicious and versatile food - so enjoy some today - in a cookie, granola, bread or as a bowl of warm oatmeal. Oats are naturally gluten free so are an excellent grain choice for those with compromised gut function.  Those with celiac disease or severe gluten sensitivities would want to make sure the oats are processed in a dedicated gluten free facility to avoid cross contamination with other grains.

A bowl of Warming Winter Chai Tea Oatmeal may be just what the doctor should order. Warm and satisfying infused with just the right hint of spices, this is winter comfort at its best.

Warming Winter Chai Tea Oatmeal

Infused with the flavorful spices of chai tea, this fast and easy breakfast will warm you up for sure on a cold winter morning. Prepared in an insulated travel mug, it can be ready when you are to "walk out the door with you" for a warm breakfast on the go.

Makes 1 serving
  • 1 cup brewed chai tea
  • cup regular rolled oats or GF rolled oats
  • Pinch of salt
  • of a medium apple, chopped into small chunks, optional

In a small pot, over high heat, bring brewed tea to a boil.  Stir in oats, salt and apples if using. Immediately remove from heat. Cover and let sit for 15 to 20 minutes. For a creamier texture, reduce the heat to low, cover and cook 2 to 3 minutes, stirring occasionally. Serve as desired with your choice of sweeteners, such as sucanat or honey, and a little splash of milk. Top with other fresh fruit or nuts for a really hearty "stick to your ribs" breakfast.

This recipe can easily be made for more servings - the ratio for liquid to oats is always 2:1 - twice the liquid as oats - example 2 cups of liquid to 1 cup of oats.

A combination of any liquid, tea, water, milk can be used together or alone.

Tips

While traveling this summer, I discovered making oatmeal in my room while I dressed using a travel mug and the hotel coffee maker to heat the water. It was an easy healthy travel meal.

To prepare in a travel mug: Place oats, salt and apples in mug. Pour the boiling chai tea over the oats and give a quick stir. Place the lid on the mug. Let sit for 15 to 20 minutes. Top with sweetener, milk or other toppings as desired.

To brew the tea:

Measure 2 tsp of loose tea into a teapot or cup. Pour boiling water over the top. Cover and let steep 10 to 15 minutes. Tea can be made ahead and reheated when ready to use.

Many of you may know that our Rooibos Chai Tea by Adagio is one of my favorite teas. I have it nearly every winter morning as a latte. I made more than I needed one morning so decided to use the rest to make a bowl of oatmeal later. It was delicious. And the IngenuiTea self-straining tea pot is the perfect tool for the job. Check them out - 16 oz size item #08910 and the 32 oz size item # 08911

Registration $10
Taught by Sue Becker
We will introduce you to the world of milling your own grains and making all your own breads.  We will start from "scratch" and discuss all the necessary baking ingredients and types of wheat and equipment needed to make this lifestyle change not only possible but doable!

We will demonstrate milling flour, mixing quick breads, kneading bread dough, either by hand or machine, shaping the dough, making quick cereals, and even tortillas.

And best of all - you get to taste everything we make!!  We will demonstrate the Wonder Mill, NutriMill, Bosch Kitchen Machine, the Ankarsrum Original mixer, Zojirushi Bread Machine, Tribest Personal Blender, and the ChefPro Tortilla press.

Lots of information presenting the endless possibilities of baking with whole grains.

NOTE: If you already own a copy of our "Recipe Collection" (the RED cookbook), it would be a good idea to bring it to take notes and mark-up some recipes with helpful information you will hear in the class.  If you don't have a copy (or forget to bring one), we do have plenty for sale in the store!
