Grain of the Week - Hulled Barley


Barley is a grain that deserves a place in the kitchen of any health conscious cook. Truly an ancient grain, references to barley are found in the histories of Egypt, Europe and China. Throughout history, barley has been known for its healing properties during illnesses, and today much research has shown that both the soluble fiber and nutrients found in hulled barley are effective in lowering cholesterol and stabilizing blood sugar.

From the Bible, we know that barley was an important part of the diets of the Israelites, Greeks and Romans, especially for bread. Today, barley is a grain often overshadowed by wheat for bread making, due mostly to its lower gluten content. Though not as suitable for yeast breads, barley flour is superb in cakes and cookies. It has a wonderful nutty flavor and a very soft texture. Barley flour can be used alone or mixed with soft wheat flour to make an exceptional cake flour. Hulled barley has a rich, nutty flavor and is equally delicious added whole to soups and stews or boiled and eaten as a side dish instead of brown rice.

Hulled barley is preferable nutritionally. Pearled barley, the most widely available in stores, goes through a scouring process to remove as much as 40% of the bran layer. This process removes most of the nutrients found in barley.

Hulled barley is loaded with soluble fiber, protein, and B vitamins and is much higher in beta-glucans than wheat. (see Sue's latest blog post on beta-glucans)

Chocolate Chip Cookies with Barley Flour 

  • ¾ cups butter (1 ½ sticks) softened
  • 1 cup sucanat
  • ¼ cup honey granules
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups freshly milled hulled barley flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ cups chocolate chips


Preheat the oven to 375 degrees.  

In mixing bowl, cream the softened butter with the sucanat and honey granules until well blended.  Add the eggs and vanilla extract and continue to beat until well blended.

In a separate bowl combine the barley flour, baking powder, baking soda, and salt.  Add the flour mixture 1 cup at the time to the butter mixture until well incorporated.  Stir in the chocolate chips.

Scoop the dough onto baking sheets using a scoop or spoon using 2-3 Tablespoons of dough.  Bake in preheated oven for about 12-14 minutes, until the edges are lightly browned.  Let cool on the baking sheet for about 10 minutes, then transfer to a plate to completely cool.  These cookies freeze well.

Grains are perhaps the most important component of the human diet and for thousands of years have been considered by all to be the "staff of life".  As one of the most nutrient dense food groups available, grains should be a first stop in anyone's journey to better health. 

In this informative and encouraging presentation, Sue will do a short demonstration on flour milling and make both muffins and yeast bread for you to enjoy at the end of the class.  Her lecture presentation will cover the nutritional profile of whole grains, the affects of commercial processing, and the relationship of whole grains to good health.

We will introduce you to the world of milling your own grains and making all your own breads.  We will start from "scratch" and discuss all the necessary baking ingredients and types of wheat and equipment needed to make this lifestyle change not only possible but doable!

We will demonstrate milling flour, mixing quick breads, kneading bread dough, either by hand or machine, shaping the dough, making quick cereals, and even tortillas.

And best of all - you get to taste everything we make!!  We will demonstrate the Wonder Mill, NutriMill, Bosch Kitchen Machine, the Ankarsrum Original mixert, Zojirushi Bread Machine, Tribest Personal Blender, and the ChefPro Tortilla press.

Lots of information presenting the endless possibilities of baking with whole grains.

NOTE: If you already own a copy of our "Recipe Collection" (the RED cookbook), it would be a good idea to bring it to take notes and mark-up some recipes with helpful information you will hear in the class.  If you don't have a copy (or forget to bring one), we do have plenty for sale in the store!

Co-ops are a great way to get your grains and other supplies that are just too expensive to ship any other way.  Current co-op shipping rates range from 12 cents to 15 cents per pound (depending on distance from our warehouse) when we deliver on our own truck, compared to UPS rates that can be around 60 cents a pound!
