Resta Gelso Moro Chardonnay

A fresh and crisp wine, this true Chardonnay has a medium body and clean finish. Un-oaked with no malolactic fermentation allows this wine only a slight creaminess paired with hints of green apple and a touch of minerality. Little complexity and perfect balance permit this wine to drink like a true Chablis. Serve with mild cheeses, chicken and fish, ideally with a mild fruit salsa or relish, possibly even milder preparations of sauteed pork. This wine is a great aperitif as well. As we enter September and hopefully the last month of really hot weather, I thought a light salad and some shrimp cooked on the grill would be a great way to close out the summer. A light lemon vinaigrette is quick and easy and allows the shrimp to showcase themselves. Kalamata olives add a touch of briny flavor. Roasted red peppers and red onions add a touch of sweetness. Some quartered artichoke hearts round out the salad for a great, low calorie, high fiber meal.

Truly, an easy drinking example of an Old World Italian wine. Medium body, blue fruit and spicy undertones, which soften the Negroamaro grape. Smooth finish and strong fruit make it appeal to a broader audience. Lingering finish. Serve with hors-d'oeuvres, pasta dishes, white meat, lamb, light roated meat, chocolate and cigars.

Those of you have been following us for a while know I have a strong emotional connection to Julia Child. I had the great pleasure of getting to meet her when I was at the Culinary Institute. One of my signature dishes at the restaurant was a tribute to Julia - Boeuf Bourguignon. Here I am using her Coq au Vin as inspiration.
