We hope everyone had a wonderful 4th of July weekend!  Nothing better than celebrating with family and friends, while enjoying one of our bottles of wine!
Mocavero Negroamaro

Negroamaro

Balanced tannins, vibrant acidity and beautiful structure, allows this wine to be a classic Southern Italian delight.  A silky smooth yet bold red with a unique flavor palate including blackberry and vanilla.  A noble accompaniment to roast meat, strong cheese, excellent with pasta and ragu.


Featured Recipe Pairing -

Rigatoni with Mushrooms

This is a delightful recipe that goes especially well with the Mocavero Negroamaro.  There is an earthiness to this wine that pairs very well with the mushrooms.  You may make it with a variety of mushrooms such as chantrelles, morels, and shitakes or you may use button mushrooms which will not have the depth of flavor of the dried mushrooms, but will be very tasty.  Buy a small quantity of dried mushrooms such as porcini to soak in liquid.  This liquid adds great flavor to the sauce, but if dried mushrooms are not available, you may omit them.

 

Ingredients:

Rigatoni 1 pound

Dried mushrooms such as porcini - 2 ounces

Mixed mushrooms - 1 pound

Olive oil - 4 tablespoons

Diced onion - 4 tablespoons

Chopped garlic - 1 tablespoon

Mocavero Negroamaro - ½ cup

Tomato paste - 2 tablespoons

Italian seasoning - 1 teaspoon

Chicken stock - 1 cup

Heavy cream - ½ cup

Reminiscent of a pinot grigio or an un-oaked chardonnay, the Trebbiano is a light bodied, off-dry, crowd pleaser with the delicate flavors of pear and apple.  This mellow lightly fruity white has a hint of minerality.  Its crisp clean finish makes it an "easy to drink" wine that can be had alone, chilled on a hot summer day and yet compliments any meal.    

   

 

Featured Recipe Pairing - Paired Coulibiac

Coulibiac is salmon, rice, mushrooms, spinach, and hard boiled eggs wrapped in pastry and baked in the oven.  It makes for an impressive presentation, and is much easier than the finished product or the recipe appears at first glance.  You will impress your friends and guests when you serve this dish which pairs beautifully with our Martin Ulisse Trebbiano. 

 

Ingredients:

Crescent roll dough - 2 can

Salmon - one entire side of salmon, skin removed

Rice - 1 cup

Olive oil - 2 tablespoons

Carrots, finely chopped - ¼ cup

Onions, finely chopped - ¼ cup

Celery, finely chopped - ¼ cup

Chicken Stock - 2 cups

Frozen chopped spinach - 1 package

Mushrooms - 1 pound

Butter - 2 tablespoons

Eggs, hard boiled - 6 each

Salt and pepper to taste

Did You Know?

Traditionally, wine was never stored standing up. Keeping the wine on its side kept the wine in contact with the cork, thereby preventing the cork from drying, shrinking, and letting in air. However, wine can be stored vertically if the bottle has an artificial cork.
