Happy Easter!

Spring tulips We wish you the beauty of fine spring weather and the joy of the Resurrection! We also hope you find your Easter basket overflowing with a good amount of decadence - don't eat TOO much chocolate! You'll want to save room for these delicious Easter dishes.

We've come up with recipes that could easily satisfy your entire Easter menu if you wish:

Extravagonzo Easter Leg of Lamb
Ultra Creamy Mashed Potatoes

Apricot Glazed Carrots

Creamy Dill Cucumber Toasties
You will find the carrots and toasties to be appropriate for finger foods and/or potlucks. We did not include a dessert recipe because, well, we figured you'd be pretty full from chowing on the contents of your Easter Basket! ;-)

Dyngus Day

Being of Polish decent - my Mama's folks came over on the boat - I thought you might find Dyngus Day - Easter Monday - to be of interest. Buffalo, NY -  my hometown - is considered the Dyngus Day Festival Capitol.

Extravagonzo Gołąbki (Stuffed Cabbage Rolls)

And one of my favorite foods to eat on Dyngus Day?
Pussy Willow
Pussy Willows or Water?
"This is a yearly debate among Dyngus Day revelers. The tradition holds true that on Easter Monday boys would sprinkle the girls with water and tap them with pussy willows. On Easter Tuesday, the women would return their favorite. During modern Dyngus Day, it is common practice that both men and women trade water and pussy willow equally." ~from DyngusDayBuffalo.com

You can go to DyngusDayBuffalo.com to learn more about this fun traditional Polish Holiday.

Have a fun, safe holiday and be on the lookout for those pussy willow branches...

Onward toward the sunshine...
