Protect Yourself and Your Family from Lyme Disease

The Lake County Health Department/Community Health Center is cautioning residents to be particularly aware of ticks this summer as Lyme disease cases are becoming more prevalent in Lake County. Ten years ago in 2003, six cases were reported, while in 2012, 17 cases were reported. Between 2003 and 2012, 100 cases of the illness were confirmed in the area.

Thus far this year, six cases have been reported. While most cases in the past were diagnosed in people with a history of travel outside of Lake County, most cases this year have been attributed to tick exposure in Lake County.

Exploring Lake County Farmers Markets

Fruit salad, corn on the cob and potato salad are some summer favorites, and this Fourth of July we can support our neighbors and help strengthen our local economies by buying local produce.  Purchasing food grown, processed, and distributed locally helps to employ people in our community, generate income and keep dollars circulating within our county.

On a recent trip to my local farmers market, I purchased some fresh grown produce that is in season, including some strawberries and rhubarb.  At first, I had no idea what to do with rhubarb but then I decided to make a strawberry rhubarb pie and it was fantastic.  It's been fun to decide what to prepare for dinner based on what is in season and what is available at the local farm stand.

A lot of these foods and cooking ideas are new to me and I can't tell you how much I'm learning about all of the different things I can make with local foods from local farms.

Join me as I explore Lake County farmers markets!  I look forward to sharing my experiences and favorite recipes with you.  Find your local farmers market here

Even though this was my first strawberry rhubarb pie, it was absolutely delicious! Enjoy!

Strawberry Rhubarb Pie:

2 cups sliced rhubarb
2 cups halved strawberries
1-1/4 cups sugar
1/4 cup Minute Tapioca
1 pkg.  (14.1 oz.) Ready-to-use refrigerated pie crusts (2 crusts)
1 Tbsp.  Butter or margarine

  • HEAT oven to 425°F.
  • COMBINE first 4 ingredients. Let stand 15 min.
  • LINE 9-inch pie plate with 1 crust as directed on package for two-crust pie; fill with fruit mixture. Dot with butter.
  • Cover with remaining crust; seal and flute edge. Cut several slits in top crust to permit steam to escape.
  • BAKE 45 min. or until juices form bubbles that burst slowly. Cool.
  • Cut second pie crust into 10 (1/2-inch-wide) strips with pastry wheel or knife. Place 5 of the strips over filling. Weave lattice crust with remaining strips by folding back alternate strips as each cross-strip is added. Fold trimmed edge of lower crust over ends of strips. Seal and flute edge.
