Sue Riedl's No Bake Energy Bars

Ingredients
2 cups of Medjool dates
1/2 cup of hot water
2 cups of oats
1/2 cup of unsalted cashews
1/2 cup of dried cherries (replace nuts with dried fruit if preferred )
1/2 tsp salt
1/2 tsp of cinnamon
Instructions Using a food processor Pulse pitted Medjool dates and up to a 1/2 cup hot water in food processor until it becomes a thick paste. Add oats and pulse until combined.
Then add unsalted cashews, dried cherries, salt and cinnamon. Pulse until combined and as chunky or smooth as you like.
Lightly grease an 8 x 8 dish and press the mixture into it. Press more nuts and dried fruit into the top. Chill overnight and cut into whatever size bar is preferred. These are not rigid or super firm, but wrapped, they hold their shape well enough for a quick pick-me-up.
