So, I pull up and reread James Russell Lowell's very beautiful and descriptive poem that starts, "And what is so rare as a day in June? Then, if ever, come perfect days..." and, while I easily envision what he describes, part of me wants to shout, "But, wait! What about October??!"

Slow Cooker Mushroom Spinach Lasagna

A vegetarian lasagna recipe made with a mushroom-spinach-tomato sauce layered with uncooked lasagna noodles and cheese in a slow cooker.

Ingredients:
No-Stick Cooking Spray
  • 1 tablespoon olive oil
  • 1 pkg (8 oz) fresh sliced mushrooms
  • 1 pkg (6 oz each) baby spinach 
  •                                   leaves
  • 1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
  • 2 cups tomato Sauce
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1 container (8 oz) part-skim ricotta 
  •                                        cheese
  • 1/2 cup grated Parmesan Cheese, 
  •                                     divided
  • 1/4 teaspoon ground black pepper
  • 6 dry lasagna noodles, uncooked
  • 1-1/2 cups shredded Italian blend 
  •                         cheese, divided
  • Directions
    1.  Spray inside of 4-quart slow cooker with cooking spray. Heat oil in large skillet over medium-high heat. Add mushrooms; cook 3 minutes, stirring occasionally. Add spinach; cook 3 minutes more or until mushrooms are tender and spinach is wilted, stirring occasionally. Stir in undrained tomatoes, tomato sauce, Italian seasoning and salt. Bring to a boil. Reduce heat and simmer 3 minutes, stirring occasionally. Meanwhile, combine ricotta cheese, 1/4 cup Parmesan cheese and pepper in small bowl; set aside.

    2.  Spread 3/4 cup sauce mixture over bottom of slow cooker. Layer 3 lasagna noodles over sauce mixture, breaking noodles to fit. Top with 3/4 cup sauce mixture, ricotta cheese mixture and 1 cup Italian cheese. Top with 3/4 cup sauce mixture and remaining 3 lasagna noodles, breaking to fit. Spoon remaining sauce mixture over noodles.

    3.  Cover; cook on LOW 5 hours or until noodles are tender. Sprinkle with remaining 1/2 cup Italian cheese and remaining 1/4 cup Parmesan cheese. Cover; let stand 5 minutes or until cheese melts.

    Adventist Hospitals in West Africa are in need of funding in order to open after being closed due to the Ebola virus. Cooper Adventist Hospital in Liberia had to be placed under quarantine when two workers became infected. Waterloo Hospital in Sierra Leone had to close when several workers contracted Ebola and three died. 

    Hospitals are said to be the most dangerous place you can be right now. That is why it is important to show support to these brave medical professionals that are working to maintain a level of safety and health for the patients they are treating. Some of the greatest needs are gloves, masks and surgical gowns as well as other much-needed equipment to help maintain a level of safety and protection for the physicians and patients.

    Trouble in Paradise    

     

        It was October of 2006. We were just beginning our Hawaiian vacation. We woke up Sunday morning to the happy sounds of a little boy's chatter. The plan for the day included a leisurely breakfast, packing up and doing some sightseeing of the island, then a short flight to Maui where we would spend the next week.

      Minutes later plans changed drastically, as Laurella and I stood in our room, the floor began to shake and we heard the sound of the pictures on the walls rattling. The sensation of movement was very slight, but Laurella instantly knew it was an earthquake, having grown accustomed to them, being raised in California where it is a fairly common occurrence. To me it didn't feel any different than when the train would go past our house on the farm where I grew up.

        I didn't think much of it until about five minutes later when the power went out. Suddenly I realized there was trouble in paradise. The waves increased and the rain began to fall. The humidity rose and our comfort level decreased, rapidly.

           In a matter of moments the entire state of Hawaii had been crippled. Most of the radio stations were out of power. No one had access to TV. Most computers weren't working so we were unable to connect to the internet to discover what was happening.

          In this information flooded world everyone around us was starved for information. What's happening? When will things return to normal? Is everyone okay? For those of us in Hawaii the answers didn't start coming in until many hours had passed by.

            As I sat, covered in sweat, the air thick with humidity, I again thought of Paradise. As beautiful as it is here, nowhere on this planet is truly paradise.

           When God created this planet, He did so with the desire that there would be no sin. Everything was perfect. The Bible tells us in Genesis 1:31 "Then God saw everything that He had made, and indeed it was very good..."

           The best part is that God created a perfect world because He loves us. Even though we sinned God showed His amazing love to us by sending his son to die for us so that we could once again enjoy Paradise, with Him.
