To all who had anything to do with the FALL FESTIVAL -- planning, setting-up, running a booth, cooking/bringing food, singing or speaking for the Vespers program, helping with tear-down, cleaning up, attending, whatever you did -- THANK YOU!!!! The evening was wonderfully well-attended. Food was delicious and there was such an interesting variety of ethnic items. Even the weather was perfect!

Baked Asparagus & Red Pepper Frittata
|  |
- 1 lb. fresh asparagus, trimmed and steamed until done, but still bright green
- safflower oil for oiling pan
- 1 lb. firm tofu, crumbled
- 1/2 soy milk or other non-dairy milk
- 2 Tbsp. cornstarch
- 2 Tbsp. yeast flakes
- 1 Tbsp. minced fresh garlic
- 1+1/2 tsp. agar-agar flakes or powder
- 1 tsp. Dijon mustard
- 1 tsp. sea salt
- 1/4 tsp. turmeric
- 1/8 tsp. red pepper flakes
- 1/4 c. chopped fresh basil
- 1/4 c. chopped fresh parsley
- 1/4 c. fresh red bell pepper, or fire roasted pepper, finely diced
- 1/2 c. green onions, thinly sliced
- 1/2 c. shredded vegan mozzarella
In food processor, pulse tofu and soy milk. Add cornstarch, yeast flakes, garlic, agar flakes, mustard, salt, turmeric, and red pepper flakes. Pulse until smooth, adding a little water if necessary.
Pour half of the mixture into an oiled casserole dish, top with asparagus, basil, parsley, chopped red pepper, green onions and some of the mozzarella.
Pour on remaining tofu mixture, stir lightly, and top with remaining mozzarella. Bake at 375 degrees F for 30 - 40 minutes until firm.

Seasons
I stepped out the back door onto the deck and heard a crunch. My eyes shifted down to my feet where I saw a dry colorful leaf, now smashed into tiny pieces. It was then that I noticed the cool air on my face. Looking up, I saw that the trees in the back yard were no longer green, and my eyes were filled with a myriad of breathtakingly beautiful colors. Indeed, fall has arrived, I thought to myself.
What happened to summer, I wondered. It seemed like only a few days ago I had been longing to go inside where it was air conditioned. Now I wondered if I should go back inside and grab a coat.
So much of our world is noisy with change. But right now, where I sit, it is quiet change I see. My arms and feet are actually a little chilly. Looking out the window, I can see the blue sky covered with hazy gray clouds. The trees are already losing their colorful leaves and the branches are gently swaying in the cool breeze. To me it looks cold outside.
Daniel 2:20-22 says, "...Blessed be the name of God forever and ever, for wisdom and might are His. 21) And He changes the times and the seasons; (emphasis supplied) He removes kings and raises up kings; He gives wisdom to the wise and knowledge to those who have understanding. 22) He reveals deep and secret things; He knows what is in the darkness, and light dwells with Him."
As I look out the window and see change, I am comforted to know that there is a God in Heaven, my God, the living God, who is in control of everything. What's more, He wants to be in control of your life. Who better to be in control of our lives than the God who is in control of the universe?

On Monday, Oct 13, Carl and I will be making a "pilgrimage" to Phoenix to meet with one of the few doctors in the country that has expertise in treating pudendal neuralgia. We feel blessed that with so few options, this doctor is within a long day's drive. We will be meeting with Doctor Hibner and his team on Oct. 14 and 15. Would you please pray for God's blessings on this trip?
Our Sabbath school this quarter is studying the book of James. James, the brother of Jesus, tells us in James 1:5 to ask God for wisdom and he will grant it. We are praying not only for our own wisdom, but also wisdom for Doctor Hibner and his team. We pray that they will be able to determine to best course of treatment. We pray for no more set backs and a clear path to recovery.
Thank you so much for keeping us in your prayers, and please don't give up! I want to come back to church!

| Adventurers (ages 4-9) and Pathfinders (10+)----There is still time to join! Our monthly kids clubs meet the second Sabbath of each month right after potluck from 1:15-3:30 pm. This is a great way to spend a Sabbath afternoon in Christian fellowship while learning more about God and his amazing world He made for us. Any questions?
