Pam's Pause
Little snippets of this and that this week have reminded me of a much-treasured children's book in my home library: The Wonderful Happens. In the book, a field of wheat is harvested, the wheat ground to flour...and the wonderful happens: continue
Cook pasta according to package directions, omitting salt and fat; drain and set aside.
Place asparagus and tomatoes on a jelly-roll pan. Drizzle with 1 tablespoon olive oil; sprinkle with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Toss gently to coat; arrange asparagus and tomato mixture in a single layer. Bake at 400 for 6 minutes or until asparagus is crisp-tender. Remove asparagus from pan. Place pan back in oven, and bake tomatoes an additional 4 minutes. Remove tomatoes from pan; let asparagus and tomatoes stand 10 minutes. Cut asparagus into 1-inch lengths; halve tomatoes.
Combine shallots and the next 4 ingredients (through honey) in a small bowl, stirring with a whisk. Gradually add remaining 3 tablespoons oil, stirring constantly with a whisk. Stir in remaining 1/8 teaspoon salt and 1/4 teaspoon black pepper.
Place pasta, asparagus, tomato, olives, and arugula in a large bowl; toss. Drizzle juice mixture over pasta mixture; toss. Sprinkle with cheese.
Yield: 4 servings (serving size: about 1 1/4 cups pasta mixture and 2 tablespoons cheese)

Snow Day
Sometime last winter, before we moved to Utah, my alarm woke me up before it was light outside. I made my way to the couch to sit in the dimly lit room and have my devotions. As my devotions were wrapping up, my mind began to think about all of the things that needed to get done that day. I reached for my to-do list and began writing. After consulting my calendar I started to organize my day.
My phone chimed at 6:21 a.m. It was Mrs. Wredburg. I knew without even reading the message that she was letting me know that school was delayed. Joshua was going to love this. He was also going to sleep in.
When he finally did wake up he bounded out of bed and immediately started to pull on his snow boots. In a matter of minutes he declared he was ready and that it was time to go outside and explore.
Everything inside of me began to jumble together as I mentally went through all of the things that I needed to get done. No where on the list did it say, "go outside and play in the snow". There simply wasn't time.
My wife kindly reminded me how much my 7 year-old would "enjoy it if daddy would go outside and play with him in the snow." And enjoy it we did!
After the two hour delay was over he packed up and went to school and I started working on my list. Everything still got done.
I can't help but wonder how many opportunities I have missed to "help" someone else because I was "too busy." Busy, we are always busy. The real question is, are we busy with the things that are truly important?
