International Students Have a Busy Summer
Hocking College's
English as a Second Language (ESL) students have been quite busy this summer. The students visited a local honey producer, Jack Cantrell of Cantrell Honey, where they learned about honey production and bee cultivation. Then, the students spent a day picking their first strawberries at Vest Berries.

Lastly, the ESL students volunteered during the My Neighbor's Keeper Fundraiser Bike Tour on July 21 in Athens County. They worked at the break stops and the bicyclists were very appreciative of their help. The bike tour raised $945 and all proceeds will purchase gift certificates from the Athens and Nelsonville Farmers' Markets to be distributed to emergency food providers who will use the gift certificates to assist their clients.

Bounty on the Bricks Attracts Nearly 330 Guests
Court Street looked like a whole different place on Saturday, August 10. Bounty on the Bricks, a dinner event to raise funds for the hungry in Athens County was held until 10 p.m. The Athens Foundation organized the event and had the help of over 70 volunteers to set up the series of connected dinner tables down Court Street.

Not only does the event raise funds for food insecurity within the county, but it also celebrates local food. The food served was all local, as well as all local entertainment at the event. Hocking College's Dean of the McClenaghan Center for Hospitality Training, Chef Alfonso Contrisciani, prepared the meal with his staff. They worked to prepare the foods for three months, for a donation of $75 per person to eat the delicious meal.

Nearly 330 guests attended the sold-out event. The Osteopathic Heritage Foundation of Nelsonville and Sisters of St. Joseph Charitable Fund will match the funds raised through Bounty on the Bricks to create a new program called "Bounty in the Pantries." This will enhance the capacity of local food pantries and feeding programs to serve more healthy foods to those in need. Read more about the event in The Athens News.

Helping a Hocking College Student Get Her Legs Back
Hocking College student Attiah "Tia" Fogle had dreams of joining the Navy and becoming a chef at the White House. As a culinary student, she was working toward this goal until last October, when a car she was in failed to negotiate a curve. Fogle ended up wrapped around a tree in Riley Township in Ohio.

Fogle and her two friends were on their way to Clyde, Ohio to spend the night at a friend's home before going to Cedar Point the next day. She had to have her legs amputated due to the severity of her injuries. Fogle has undergone 20 surgeries since the accident.

Her family owes $3.3 million in medical bills and has to make their home disabled friendly. To support the Fogle family and help Tia get her legs back, nearly 300 people attended a fundraiser that raised around $8,000. The family is very thankful for everyone's support.

Hocking College Leads to 40 Years Dedicated to the Forest Service
Steve Munson's career in the Forest Service began with his education at Hocking College, "providing the foundation that allowed me to be successful in my career path," he said.

A 1973 graduate of Hocking College's Forestry program, Munson has had a life-fulfilling career. During his days at Hocking, he worked for the Ohio Division of Forestry planting trees and participating in timber stand improvement projects. His degree from Hocking College has allowed him to live in Utah, Minnesota, Pennsylvania and Arkansas.

Munson began his career with the Forest Service as the supervisory technician for the Gypsy Moth Research Development Group. When the project ended in 1978, he transferred to the Forest Health Protection staff in St. Paul, MN. Upon completion of his Bachelor's degree, Munson was promoted to a staff entomologist position where he worked in the St. Paul office covering all federal lands in Minnesota, Michigan, Wisconsin, Iowa, Indiana and Missouri. Munson became the supervisory entomologist in the early 90's and later accepted the position as the Group Leader for the Forest Health Protection program in the Intermountain Region.

In June of 2013, Munson will have completed his 25th year in the Intermountain Region and in August of 2014 he will complete 40 years of service for the Forest Service.

School of Hospitality Receives Perkins Grants
Through the Perkins Grant process, Hocking College's School of Hospitality has received the funding of two Perkins Mini-grants.

The grants provided portable stove-top induction units that run on standard electrical source and have the ability to boil water in two to three minutes. Induction cook tops are state of the art and save 40 percent of energy used in conventional cooking means. The units allow instructors to have demonstrations at any given work station and also help students with more cooking space during daily lesson and production.

The grants also funded a Julaba Thermal circulator to teach students the art of Sous Vide Cooking. Developed in the late 70s by the French, Sous Vide stands for cooking under vacuum in a cryovac bag with herbs and seasonings for a prolonged cooking time at very low temperatures. The Sous Vide process conserves energy and cuts down on product shrinkage resulting in increased yields. It is also a healthy form of cooking with minimal fat and sodium.

Chef Alfonso Contrisciani, Dean, thanks the Perkins Grant team, and says the equipment will greatly assist the program and contribute to the future success of our students.

Other grants funded through this process will be featured in future Verbatim articles.
