Holiday Schedule for CSA Delivery and YMCA Mini Markets as follows:

Delivery for Tuesday 12/25/121 will be delivered one day early on Monday 12/24/12.

Delivery for Tuesday 1/1/13 will be delivered on day early on Monday 12/31/2012.

Delivery for Thurday 12/27/13 will remain the same but there will be no market at the YMCA.  Saturday deliveries will remain the same but Locally Grown will be closed.

 

Since we are still paying off our summer water bill we are trying to raise funds by offering a discounted price on CSA contracts.  The price reverts back to 2010 prices.  Special "Get Through the Winter and PAY OFF our Summer Water Bill Sale"

 on CSA contracts. 

If you are up for a renewal soon or would just like to take advantage of a sale on CSA contracts, you should act now before Mr Neil changes his mind!!  You must pay the full amount up front but there is no limit to how many weeks you can add on to your current contract.

Also we have added our new cheese contract to this document.  If any existing CSA's would like a weekly cheese you can add that on at a prorated rate to the end of your contract.  Please share this special sale with all your friends, family and even strangers!!  We really need to increase our CSA support here at the farm.

 

For our CSA customers only!!!  We need your order your fresh chickens this week!!

We will be offering you a fresh whole chicken from our stock of chickens for Christmas.  They will run $5.25/lb.  When I say fresh I mean fresh....straight from the coop to your table!

Flat Creek Lodge, a sustainable dairy, farm and hunting and fishing resort and spa in Southeast Georgia, opened its doors in 2002 after several years of planning and development. For more than a decade, Flat Creek has been committed to increasing trade and tourism in Emanuel County and Eastern Georgia by enhancing the land and showcasing products like artisanal cheeses and naturally-grown mushrooms and berries. 
Georgia Red
The award-winning Georgia Red is a wonderful washed rind cheese.  It is a semi-soft cow's milk cheese with a creamy, earthy flavor.  This cheese is paired beautifully with sweet or dry red wines. It's also a perfect partner for fruit and makes any cheese board more lusciously tempting.

Aztec Cheddar
The Flat Creek Lodge award-winning Aztec Cheddar is a traditional Cheddar layered with guajillo chilies and black cocoa.  The flavor is mild, exotic, earthy and complex. Add Aztec Cheddar to your favorite recipes, serve on a platter with crackers and even sprinkle it on homemade pizza for a unique delicious change.

Heavenly Blue
Heavenly Blue is slightly stronger and firmer than the Flat Creek Stilton.  This stronger flavored blue is an excellent pairing for a glass of red wine or in any recipe where you want a little more blue flavor.
Low Country Gouda
The Low Country Gouda is a traditional Dutch style Gouda.  It is semi-hard with a mild buttery flavor. This cheese is traditionally enjoyed sliced thin with a cup of tea or as an appetizer with red wine.  It is also delicious with rye breads and deli meats.

 Natural Rind Cheddar
This award-winning favorite is a traditional American style Cheddar aged a minimum of 9 months in a special cave designed to allow natural flora and fauna growth on the surface of the cheese.  This Cheddar develops a dark rind on the surface, which creates a unique flavor and a firmer texture. The Natural Rind Cheddar pairs well with premium ales.

Flat Creek Blue Stilton
The Blue Stilton is a mild creamy blue. It goes well in salads, dressings, on burgers or stuffed in olives. Try it in recipes too as an omelet filling or in Cordon Bleu stuffed chicken.
Little Martha
Little Martha is fashioned after an Italian Crescenza. It becomes very soft at room temperature, which makes it perfect as a spread over a toasted bagel or served as a dessert topped with berries and honey. 
Chipotle Cheddar
A rendition of the Flat Creek Cheddar with the addition of chipotle peppers and adobo sauce for a spicy, smoky flavor. This is the perfect complement to tacos and nachos. 
Triple Threat
This creamy farmer's cheese is spiced with red jalapenos, green jalapenos and habanero peppers for an unmistakable hot pepper flavor. It is ideal for use in dips, sauces, on wings, and in any dishes that can take some kick. The Triple Threat is a real adventure in eating!
Paris Medley
This is a farmer style cheese that is spiced with onions and chives and a hint of red pepper. Paris Medley is delicious on anything grilled, including: burgers, sausage, brats, steaks, hotdogs and more.
Mediterranean
This is an exclusive recipe created at Flat Creek Lodge. It is not a traditional feta, although it does have some similarities. It is made from 100% cow's milk and can be sliced, crumbled, or cut into bite sized pieces. This Mediterranean makes a wonderful addition to salads, burgers and cheese platters. It can be coated with chocolate for a salty sweet snack - just grab a piece and nibble.
Montazzio
An original recipe designed at Flat Creek Lodge, Montazzio is a firm washed rind cheese that is aged over 6 months and has a dry, mild flavor. It is a great addition to any refined cheese plate or a nice arugula and pear salad. 
Havarti Dill
This is a traditional Danish cheese with the addition of dill for a nice herbal and floral flavor. This full flavored cheese is creamy and has an outstanding texture. It is the perfect compliment to any cheese platter or as a snack

Now that both of our big markets are closed you can special order from us to be delivered to any of our drop offs including or Sandy Spring's Farmer's Market Location to be picked up between 10:15 am and 11:00 am  and Piedmont Park between 9:00am and 9:45am.  If you are a current CSA there is no minimum.  If you are not there will be a minimum of $25.00 for this special delivery.  Email me with your order.  Available this week at our markets:

Ribollita (Italian Bread Soup)

  

 

 

Ingredients
 
3 cups (1-inch) cubed hearty Italian country bread (about 6 ounces)
Cooking spray
3 tablespoons extra-virgin olive oil, divided
1 cup chopped onion
1/4 cup chopped celery
1 tablespoon minced garlic
6 cups water, divided
6 cups (1-inch) chopped kale or swiss chard
6 cups chopped Savoy cabbage
4 cups chopped broccoli rabe or broccoli greens with florets
2 cups (1-inch) cubed peeled Yukon gold or red potato
1 cup thinly sliced carrot
1 (14.5-ounce) can whole plum tomatoes, undrained and chopped
2 (15-ounce) cans cannellini beans or other white beans, rinsed, drained, and divided
3/4 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper
1/2 cup (2 ounces) shaved or grated Parmigiano-Reggiano cheese 
Preparation
 
1. Preheat oven to 375°.
 2. Place 3 cups bread on a baking sheet, and lightly coat with cooking spray. Bake at 375° for 15 minutes or until toasted, stirring occasionally. Remove from oven; cool.
 3. Heat 1 tablespoon olive oil in a large stockpot or Dutch oven over medium-high heat. Add onion and celery to pan; sauté 5 minutes. Add garlic, and sauté 1 minute. Add 5 cups water and next 6 ingredients (through tomatoes). Cover, reduce heat, and simmer 20 minutes or until greens are wilted, stirring occasionally. Mash 1 can of beans. Add mashed beans and remaining 1 cup water to pan; bring to a boil. Reduce heat, and simmer 35 minutes or until potato and carrot are tender.
 4. Stir in bread, remaining can of beans, salt, thyme, oregano, and red pepper; bring to a boil. Reduce heat, and simmer 10 minutes. Remove from heat; cover and let stand 10 minutes. Ladle about 1 1/2 cups soup into each of 8 bowls. Sprinkle each serving with 1 tablespoon cheese, and drizzle with 3/4 teaspoon oil.
