Food Allergies and Sensitivities
It is estimated that 20% of the population have an adverse reaction to food. Traditional testing of food allergies has focused on blood and skin tests that detect an immediate immunological reaction to food antigens (proteins). A true food allergy causes the immune system to respond to food as if it were a foreign substance. This reaction is mediated by IgE immunoglobulins and leads to a release of histamine and subsequent hives, itching, swelling, decreased blood pressure, and in some cases, a severe life threatening reaction. In this case, a food particle (usually a protein or long carbohydrate) acts as a true antigen to the body's immune system. Food allergies are typically treated by avoiding the offending food.
However, food sensitivities are widely prevalent in the American population and are distinctly different from food allergies. The most common type of food reaction is food intolerance or sensitivity. This type of reaction does not result in a life-threatening reaction but can cause a multitude of symptoms. This IgG mediated immune response can occur immediately but most commonly occurs as a delayed reaction up to 72 hours after ingesting the offending food. Common symptoms related to food sensitivities include but are not limited to: fatigue, mood changes, skin rashes, eczema, hives, asthma, pain, headache, ear infections, gastrointestinal symptoms and altered mental clarity. The symptoms can be mild or more severe. Each person can react differently. For example, a child with sensitivity to dairy may have difficulty with focus at school, throw tantrums, and have mood swings. Or another child may develop eczema but exhibit no mood changes. That is why it is important to identify food allergies, as it may have an effect on not only the physical level, but the mental and emotional level as well.
There are many theories as to the cause of food sensitivities. Genetic predisposition, gastrointestinal lining permeability, pre-existing immune system disorders, improper digestion, lack of digestive enzymes and poor health of the intestinal lining may all play a role in the causation of food sensitivities.
Typical allergy testing focuses on IgE mediated reactions to foods only. This rules out if a true allergy exists but misses the presence of food sensitivities which may be affecting a large number of people. Tests are available that can test both IgE and IgG food reactions. This is typically done with a routine blood draw and sent to a reputable lab for analysis. At Arizona Natural Medicine, we utilize cutting edge testing by some of the leaders in functional medicine to assess our patients for food allergies and sensitivities. The test we use helps identify those with true IgE-mediated allergies as well as IgG-mediated food intolerances. The test measures IgG antibody levels to 88 foods, quantitative IgE antibody levels to the most common types of dietary allergens, and total IgE. It tells you what foods you react to and the severity of the reaction. The test also provides a food rotation meal plan to aid in the treatment of this condition. Additional tests are also available for regional inhalants, molds, vegetables and spices.
By determining if food allergies are present, we can provide an effective treatment plan to diminish or eliminate food sensitivities. True food allergic reactions may be reduced but may not be eliminated. However, food sensitivities, can be significantly reduced or eliminated resulting in a happier, healthier you.

The Skinny on Fiber
Dietary fiber plays an important role in health and disease prevention
There is a tremendous amount of scientific evidence supporting the idea that eating a mostly plant-based diet that is high in fiber has a protective effect against many chronic diseases such as heart disease, cancer, arthritis, obesity, diabetes, high cholesterol, irritable bowel syndrome (IBS), ulcerative colitis, gallstones and hemorrhoids. In the United States, we've moved away from a whole foods diet rich in complex carbohydrates to a diet full of simple sugars and processed foods that are deficient in nutrients and fiber. As a result, we have seen a sharp increase in diseases associated with a low fiber diet. In order to maintain optimal health it is important to eat a diet that is primarily unprocessed, whole grains, fruits and vegetables that are high in fiber.
Dietary fiber can be soluble (able to dissolve in water) or insoluble. Fiber cannot be digested, however, soluble fiber is fermented by bacteria in the digestive tract, and absorbs water to become a gelatinous substance. Insoluble fiber has bulking action but is mostly not fermented.
Soluble fiber is found in varying quantities in all plant foods, including: legumes (beans, soybeans, peas), grains (oats, rye, barley), fruits (apples, prunes, plums, berries, pears, bananas), vegetables (broccoli, carrots, Jerusalem artichokes, potatoes, onions) and psyllium seeds.
Insoluble fiber is found in whole grains, green leafy vegetables, wheat, corn and oat bran, nuts and seeds, potato skins, flax seeds, vegetables (green beans, cauliflower, zucchini, celery) and in the skin of some fruits like apples.
A good goal for dietary fiber intake is 25-35 grams daily. This is typically easily achievable with a whole foods, plant-based diet. Fiber supplements can also be used to increase daily intake of fiber. These are in the form of capsules or powders, typically taken away from regular meals to prevent potential binding of minerals which may cause a deficiency.
Dietary fiber has many functions and benefits in the body. It assists the body in maintaining health and preventing chronic diseases in the following ways:
1) Assists in weight loss: eating a diet high in fiber adds bulk to your diet, leading to faster satiety and lower calorie consumption.
2) Decreases bowel transit time: food passes through the digestive tract more quickly, which shortens the amount of time harmful compounds, both natural and manufactured, are in contact with the intestinal mucosa, which lowers the risk for conversion into potential carcinogens.
3) Increases stool bulk and weight which prevents and/or treats constipation: a larger, bulkier stool passes through the colon more easily, causing decreased intraluminal pressure and less straining. This helps to prevent formation of diverticula (pockets in the colon that can become infected), hemorrhoids and anal fissures.
4) Decreases cholesterol: fiber helps to bind cholesterol and carry it out with the stool, rather than allowing it to be absorbed back into the body.
5) Creates more soluble bile: this helps to prevent the formation of gallstones.
6) Helps with blood sugar regulation: fiber attracts water and turns to gel during digestion, trapping carbohydrates and slowing absorption of glucose.
7) Balances intestinal pH and stimulates intestinal fermentation with advantageous intestinal microflora and the production of short-chain fatty acids which may reduce risk of colorectal cancer.
A diet high in fiber is necessary to maintain good health and prevent the occurrence of chronic disease.
