Frequent Traveler: Danny Hughes

An executive with a major hotel firm explains why Peruvian cuisine ignites his culinary passion and reveals that he never travels without a pair of sneakers and a photo of his family.

By Mark Holston

As Hilton Worldwide's senior vice president for the Caribbean, Mexico and Latin America, Danny Hughes is responsible for the operations of all corporately owned or managed hotels and resorts throughout the region. He also focuses on the corporation's regional development plan, while overseeing progress on projects such as the soon-to-open Hilton Panamá, Hilton Santa Fe Mexico City and Hilton Barra Rio de Janeiro.

Talk to us about airports: What works, what doesn't?

I love the airports at Lima and Santiago; they are both well-designed and efficient - and I would say

Lima's Jorge Chávez International Airport
they lead the way in South America at the moment. With air travel to Brazil having grown significantly over the last decade, it is great to see that airports there are receiving upgrades in time for both the 2014 FIFA World Cup and the 2016 Summer Olympics.

What do you love to eat when you travel?

I have fallen in love with the tastes of Peru. One of my favorite restaurants is Central. It serves contemporary and creative Peruvian cuisine, demonstrating the best of that country's food freshness and flavors with a modern twist. Try the rice with scallops. For a good steak away from home, I like El Hornero (also in Lima), where they pair the meat with giant corn and fresh asparagus. And of course, Hilton Lima Miraflores' restaurant Social is a great option. With a concept that mixes Peruvian and American cuisine, the crab cakes and the anticuchos de lomo (beef tenderloin kebabs) are my favorite starters, while the Californian ceviche and the Lobster Pot Pie are best sellers.

What's something you look for to bring home as a gift or for yourself?

You can't go wrong with locally made chocolates and small batches of the local liquor, such as tequila from Mexico.

Be honest - do you have a favorite Hilton hotel?

Working for Hilton Worldwide, I've stayed at some of the best hotels across the globe, serviced by some of the best teams anyone can ask for. It is difficult to choose just one or two favorites, but in Latin America specifically, I'd say the Hilton Los Cabos Beach & Golf Resort is truly a world-class resort that delivers a standard of service as good as any hotel in the world, coupled with a food quality that is simply incredible. For the business traveler, you can't beat the convenience and reliability of the Hilton São Paulo Morumbi. Everything at this hotel was designed with the business guest in mind, to ensure a most productive and comfortable stay. It just works beautifully.

Don't Forget ... Hughes on what every business traveler should pack

Make sure you pack your charger and your digital camera, and be sure you have cell phone service where you are going. I always take my sneakers, but also make sure I travel with my iPad, a family photo and return ticket.
