Farm Notes: Freedom from Want 
 
 
 
The Norman Rockwell image we see above is well recognizable as a traditional American Thanksgiving turkey dinner. This painting was entitled Freedom from Want and is part of a series of four that were inspired by an FDR speech during WWII that mentioned the four rights of Freedom from Want, Freedom of Speech, Freedom of Worship and Freedom from Fear. The belief in our right to these freedoms is deeply entrenched in America. Unfortunately, many around the world (including in America itself) do not enjoy all of these freedoms. Because of this inj
ustice we still have much work to do. Yet, this week we pause around a special meal to be Thankful that we have been so blessed.

Thanksgiving Week 

Pick-ups will occur at the regular times this week. If you have not already changed your pick-up location, please pick up your share at your regular location or have a friend pick up for you. Unclaimed shares will be donated to hunger relief organizations, as is our usual policy.

Recipes of the Week


 

Chunky Apple Cranberry Chutney

Adapted by Farmer Dave's from Honey.com


 

Ingredients:

  • 2 cups - fresh cranberries
  • 2 apples, peeled, if desired, cut in 1/4" slices
  • 1 cup - chopped onion
  • 1/3 cup - olive oil
  • 1/3 cup - honey
  • 4 teaspoons - red wine vinegar
  • 1/4 teaspoon - ground ginger
  • 1/4 teaspoon - ground cinnamon
  • Freshly ground black pepper

Directions:


 

In a medium saucepan, stir all ingredients. Heat to a boil. Lower heat, cover and simmer 15 minutes; stirring occasionally. Cool and refrigerate.


 

 

Sweet Potato & Butternut Squash Hash with Honey Cinnamon Butter
Adapted by Farmer Dave's from Joyful Healthy Eats


 

Ingredients for Hash:
  • 3 cups of butternut squash, small dices
  • 3 cups of sweet potatoes, small dices
  • 2 Tablespoons of olive oil
  • salt & pepper to taste
Honey Cinnamon Butter:
  • 2� tablespoons of butter, softened
  • 1 tablespoon of honey
  • 1 teaspoon of cinnamon
Directions:
  1. Preheat oven to 400�.
  2. Put the butternut squash and sweet potato in a large bowl. Toss with olive oil and season with salt and pepper.
  3. Spread the uncooked hash out on a baking sheet.
  4. Put in the oven and roast for 30 minutes.
  5. After 30 minutes, turn the hash over {or just stir it so all sides get cooked} and cook for an additional 15 minutes.
  6. Remove from oven and let sit.
  7. In the meantime, mix softened butter with honey and cinnamon.
  8. Put a dollop of the honey cinnamon butter on the Sweet Potato & Butternut Squash Hash and serve!
Slow Cooker Mashed Potatoes
Adapted by Farmer Dave's from La Creme De La Crumb

Ingredients:
  • 2 pounds red potatoes, cut into 2 inch pieces
  • � cup sour cream (or plain greek yogurt)
  • � cup milk
  • 2 teaspoons minced garlic
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Directions:
 
  1. Place chopped potatoes in the slow cooker. Cover and cook 2-3 hours on high or 5-6 hours on low.
  2. Add sour cream, milk, garlic, salt, and pepper to potatoes. Use a hand mixer to blend together all ingredients, or smash them with a potato masher. Give them a taste and add more salt if desired. Serve plain, or with any favorite toppings such as gravy, or cheese and bacon!
