Chilean Carménère
Carménère is the signature grape of Chile.
Carménère is a bit softer than Cabernet Sauvignon and a touch gamier than Merlot. Raspberries, red currants, and spice are usually Carménère's dominant notes, with a plush, mouth-filling feel when it's done right.

6 TIPS TO GREAT WINE


All wines in your home, whether you make them at Wine Kitz Ottawa Iris, another consumer winery, or even purchase them commercially, need some basic TLC to ensure they develop properly, enjoy longevity, and satisfy you right to the last bottle.

Following these tips will help you maintain your wines and enhance your enjoyment of them:

 

1) When you bottle or purchase your wine and take it home, make sure it goes straight home. At this time of year (and in hot summer weather too), the temperature of wine left in a vehicle for even an hour while you shop or visit elsewhere, can adversely affect it. Especially if the temperature change (even for a short time) is 10C or more.
 
2) When you take your wine into your home, let it stand up for the first few days to allow residual CO2 gases to escape and to set the corks. Then store your bottles on their sides to keep the corks moist.
 
3) Store your wine in the coolest, quietest, darkest place you have available. Temperature, noise, vibrations and light all affect the speed at which your wine will develop, reach its peak, and then begin to deteriorate.  
 
4) Do not store your wine in an area that may experience a significant temperature change or fluctuation over time. This can cause suspended particles to drop out and create noticeable sediment in a young wine. 
 
5) Cooling a bottle of wine in the refrigerator and then returning it to your wine rack can cause the same reaction. 
 
6) Our Aging Chart reflects the peak aging time and shelf life under ideal cellaring conditions for all of the wines you can make at Wine Kitz Ottawa Iris. The truth, however, is that few of us have ideal cellaring conditions. So it's important to know that wines stored at normal residential temperatures can reach their peak and begin to deteriorate as early as 4x faster than they would under "ideal conditions".

 NO, YOU'RE NOT ALLERGIC TO SULPHITE

Very often, when drinking commercial red wine, my nose and throat become so stuffed up I can barely talk. Contrary to popular belief, however, that does not indicate an allergy to sulphites.

I have to confess that I'm not minding this winter so far. The milder than usual temperatures are spoiling me and, with the lower Canadian dollar, I'm not really yearning to sneak away to warmer climes this year.

So, instead, I'm going to reorganize my wine cellar. It's a great time to inventory my stock, start some wines to fill my "holes" and make a plan for which wines I'd like to add over the coming year. I like to have a variety of different reds and white wine styles on hand to match different moods, different foods, different occasions. 

Of course my plans also include regular wine tasting events to keep my palate sharp.
