We will start with the much the demanded recipe from yesterday's post.
Fish Ala Teriaki Fried Rice and Bok Choy
I suggest using a white lighter tasting fish like a Mahi Mahi. We did it with bass and it taste fine, but you want something that has a firmer texture than bass. Halibut would work nicely. We blackened our Great Britain Chilean Sea Bass (You figure that one out?), but you can grill it any way you want.
The ingredients are simple, Teriyaki marinade, 2 BoK Choy halved, vegetable fried rice, grilled fish (4-6 fillets or steaks about 2 pounds), and a green garnish of your choice. We used chive snips, but sprouts would work well too.
Reduce the Teriyaki marinade in half. We started with a half a cup and reduced well below half, it was strong but very good.
Par Boil the Bok Choy halves about 10-12 minutes and then stop them in a cool bath and let them drain.
Heat the store bought fried rice or if you are feeling ambitious, cook your fried rice (I have a great recipe upon request.) and keep warm.
Grill your par boiled Bok Choy in a little olive oil and garlic until slight browned. Set aside and keep warm.
Grill or sauté your fish per your liking and keep warm in the oven so you can assemble, but be ready to serve.
Assemble as follows. Pour a small pool of Teriyaki reduction on the plate, place one half of the Bok Choy on the pool of the reduction sauce, pour some fried rice over the Bok Choy, place your fish atop the rice, sprinkle the chives upon the fish and serve immediately. The mix of the sweet and salty (we used blackened bass) was amazing.
Our side dish was stuffed Jalapeno's.
We took 8 Jalapeno's, about a half a cup of feta cheese and half a stick of softened crème cheese and a couple of table spoons of good maple syrup and mixed it until it was smooth.
Then we cut the Jalapenos (use a glove) and scooped out all the ribs and seeds. We then stuffed the peppers with the mixture.
Earlier in the day we cooked about 8 strips of bacon. (Cook extra because everyone invades the cooked bacon all day.)
We set the oven at 350 degrees and cooked the peppers about 30 to 40 minutes. During the last 10 minutes we sprinkled the peppers with the crumpled bacon and about 2 tablespoons of brown sugar.
Again, the mixture of sweet and spicy really worked.
The meal was served with a lot of 2012 Nobilo Sauvignon Blanc Regional Collection. This is a fresh cheap (about 12 bucks a bottle) sauv packed with apple, apricot, citrus and minerals. It holds well against the big taste of this dish. This wine comes with my money back guarantee. Buy it you like or I'll pay you back. Mangia, Mangia, eat, eat.
That Evil Hallmark Channel
Devin is a year round Hallmark Channel fan. Everything has to have a blimey happy ending. No matter how bad the cancer is, or how many women he cheated on her with, no mater she lost her job, or what ever the story line is, it always has a happy ending. (no wonder she was so upset about the Presidential election)
Anyhoo, she got me sucked into a couple of these stupid "days of Christmas" movie marathon on the Hallmark channel. Yes I even recorded a couple so I could watch them later. (There goes my life membership in the Steven Segal Fan Club.)
I really do like a few of the movies, but the commercials are ALMOST was bad as listening to my mother in law tell me about her interesting family from down south. I do not know the target market for advertisers, but there are commercials for everyone. In one movie I saw commercials for little toy figures, a scrunchy 50 lime green hose that reduces down to about three foot, an attorney gathering clients for a class action law suit for a gastrointestinal procedure, investment grade diamonds, a religious retreat, a video game, and an indian tribe that loans money to people.
Tonight we picked up some Italian and watched Dancing With The Stars. Aka DWTS. It is a shame that these talented 3 ladies have to be judged any further. All three are extremely talented and will bne missed. My money is on Melissa.
