Mom's Pecan Pie
This recipe is reprinted from Southern Living. The easy to make
pie takes only 10 minutes to prep and tastes delicious. (For a richer flavor, use dark corn syrup)
Ingredients:
- 1 1/2 cups pecan pieces
- 1 cup granulated sugar
- 3 large eggs
- 3/4 cup light or dark corn syrup
- 2 tablespoons melted butter
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1 (9 inch) deep dish unbaked pie shell
Directions:
1. Spread pecans in a single layer on a baking sheet.
2. Bake at 350 degrees for 8-10 minutes or until toasted.
3. Blend sugar, eggs, syrup, butter, vanilla and salt. Stir in pecans and pour in pie shell.
4. Bake at 350 degrees for 55 minutes or until set. (Note: cover pie with aluminum foil after 20 minutes of cooking to prevent over-browning).
Serve warm or cold. May be served with whipped topping or ice cream.

Actually, the star, Si Robertson, turned out to be none other than Cahaba Tractor employee Dale Gamble operating the hayride at the annual Oasis of Praise Fall Festival held last month. At least he didn't forget the tupperware cup! Happy, Happy, Happy!

Grandma was showing the children a painting of the Pilgrim Family on a Thanksgiving Day card that they had received and she commented, "The Pilgrim children enjoyed going to church with their mothers and fathers and praying to God."
Her youngest grandson looked at her doubtfully and asked, "Then why is their Dad carrying that rifle?"
