  Lovely Lettuce Mix, Crisp Cabbage, Snow Peas, tortilla-inspiring Cilantro, Sweet Broccoli, Rainbow Swiss Chard, Summer Squash, Zucchini, Beautiful Beets & Green Onions!

The Cabbage, sweet and crisp, easy to eat raw by the leaf!  We made a chopped salad for dinner tonight and my 9-year-old daughter couldn't get over how good it was, handing out pieces to all of us.

    "I just made this recipe and it's to die for!  I'm sure you can make it exactly the same if you don't use the wine but we had it here so I made it just like the recipe called for.  This would be a great recipe for your newsletter!" So here is the link:
     
    I like this comment as I also like to add a bit of sweetness to my chard:
    "YUM. The best chard recipe I've encountered yet! It is said that chard is "the valedictorian of vegetables," because it's so high in so many nutrients. I added about 1/4 c of golden raisins when I added the wine, and let them plump as they simmered. The tiny bursts of sweetness were amazing with the slightly bitter greens. I never thought of using Parm with greens before, but it was wonderful! Thanks for the recipe - it's going into my recipe box!"
     
    I got this recipe from CSA member, Dana M., that would fit some from last week and this week's boxes, substitute ingredients to fit your taste and the current season:

     

    "
    I made a beautiful root gratin casserole with a lot of our share. It was delicious and my family loved it.:) see below.

     

    1. Grease baking dish.
    2. Layer in thin slices of turnips, beets, zucchini, sweet potato, carrots, broccoli and asparagus.
    3. Heat 2 cups heavy cream add pinches of sea salt, pepper, paprika, nutmeg and fresh thyme.
    4. Pour heated mixture over the layers. Cover and bake for 1hr @ 350.
    5. Uncover and pour Panko bread crumbs on top bake addl. 20 min."

    Finely chop contents from your box to make any type of salad.  Add your favorite dressing and "wala!" Beautiful, nutritious and you can easily use all the contents of your share before the weeks out!
