First Share of 2014!
I thought I'd start off this season by letting you know what a great choice you're making to eat the freshest, most nutritious, picked-for-you-today foods, grown as clean as possible through certified organic growing methods. It's exciting to partner with you to improve the soil and health of our friends, neighbors and family! Here's what's in this week's share, along with why it's so excellent:  

  

Baby Bok Choy
Bok choy's popularity comes from its light, sweet flavor, crisp texture and nutritional value. Not only is bok choy high in Vitamin A, Vitamin C and calcium, but it is low in calories. You can eat it raw in salads, braise or stir-fry alone or with other vegetables.
  
Rosy Radish
Known to be a digestive aid and blood cleanser. The roots have are mostly water & have smattering of minerals. The leaves are off the charts nutritious! Braise or chop and add to any salad, sandwich, etc... Don't forget to remove radish greens from the roots right away.  Keep both leaves and roots lightly wrapped in plastic in the fridge.  We've been slicing them thin and adding to our morning eggs, hamburgers, salads or eating alone!
 
  
Purple or Green Asparagus
My Favorite Simple Asparagus Recipe
I saute 1 inch pieces in olive oil, adding lemon pepper and fresh pressed garlic (toward the end). Optionally add shredded Parmesan cheese.  
Very high in vitaminA, C and B complex, especially raw. Also high in potassium and zinc. Asparagus
  
Welsh Bunching Onions
I love these onions. You can eat the roots, green stalks and flowers!  We have them raw in salads or in sandwiches. Raw onion encourages the production of good cholesterol (HDL), thus keeping your heart healthy. 
A powerful compound called quercetin in onions is known to play a significant role in preventing cancer. 
  
Lettuce Mix 
My Super Foods (by Natural Notes) chart says that lettuce is an anti-oxidant very good for optimal health, nutrient-dense, beneficial for the heart, the digestive system, lowering 'bad' cholesterol & lowering blood pressure.  High in vitamins K, A, C, Folate and Manganese!
 
 
Spinach
The Super Foods chart has this to say about spinach: Powerful anti-inflammatory and anti-cancer properties, improves eyesight, regulates blood pressure, strengthens muscles, combats Macular Degeneration.

We put together a small piece of the farm for you in the form of cover crop rye grasses and wild flowers.  Enjoy, but do not eat. ;-)

A note about our beloved puppy Star.  For those of you who don't already know, we lost our beautiful, precious, little Star on May 17th.  It is VERY disappointing to say the least and we still miss her terribly.  She was truly unique, smart and beautiful.  Ryan had enrolled her and himself in a sheep herding class to take place the very next week.  
Thanks to all who expressed their heart-felt sympathy and share their own disappointing pet losses.  Pets truly are gifts to us, aren't they?
