June is bustin' out all over! Summer is officially here this month. You can smell it in the sea air, feel it in the sea breeze, see it at the sea shore and hear it in the laughter among the waves ......knowing that summer love is in the air.

Coincidence? This is the time for summer weddings, which means L O V E.
My friend Pam recently blogged about interesting shapes and holes that naturally occur in shells...and right on queue this shell with a HEART-shape rolled ashore to demonstrate her point.
Mother Nature surely is romantic! She gives us beautiful bay side sunrises, breathtaking Gulf-side sunsets and heart shaped signatures on our seashells. Who wouldn't want to begin their new life together here?

Katie Cake
A Sweet Alternative to traditional Wedding Cake
This week's recipe is compliments of Katie Gardenia, the original owner of the Bubble Room! You can find this, and other fabulous recipes in the book 'A Bubble Moment' available for sale at the Bubble Room Emporium.
Katie Cake
1.5 c. sifted flour
1.5 c sugar (divided)
8 eggs
1/4 c. cold water
1 tbsp lemon juice
1 tsp vanilla
1 tsp cream of tartar
1 tsp salt
Almond Brittle Toppings
1.5 c. sugar
1/4 tsp. instant coffee
1/4 c. light corn syrup
1/4 cup hot water
1 tbs sifted baking soda
2-2.5 c. heavy cream
2 tbsp sugar
2 tsp vanilla
3 c. sliced blanched almonds (toasted)
Cake: Sift together flour and 3/4 c. sugar. Make well in center and add eggyolks, water, lemon juice and vanilla. Beat until smooth. Beat egg whites with cream of tartar and salt until soft and peaked. Add remaining sugar, two tbsp at a time. Beat until stiff. Fold four mixture into egg whites and pour batter into 10" tube pan (not greased). Cut through batter carefully to break any air bubbles. Bake at 350 for 50 - 55 minutes. Invert pan and cool for 1 hour. Remove cake and slice into 4 layers.
Almond brittle topping: Combine sugar, coffee, syrup and water in a saucepan, stirring well over medium high heat to hard crack stage, approximately 290 on candy thermometer. Remove from heat and add soda, stirring vigoruously until blended and mixture pulls away from sides of pan. Pour onto ungreased baking sheet until cooled. Knock candy out of sheet and crush into small chunks. Whip cream, sugar and vanilla. Spread between layers and top and sides of cake. Press canddy on top and sides of cake. Decorate with sliced almonds. Do not add cany and almonds on cake more than 6 hours before serving.
