It's shoulder season. The islands have begun to "slow down" and "settle in" rolling along toward the summer months.
Winter guests have started their trek home while we islanders enjoy blissful breezes, sunny days, warm evenings and a lull before the island summer fun begins.
It's time to reflect on how fantastic our winter was ......time to plan our summer ........time to start the grill...... and time to prepare those outdoor living spaces for summer weather.
We also reflect on honoring Mother as well as remembering our heroes that have protected our freedom so that we can enjoy peace and security at home in America.
May is BBQ month and our own Island Expert will talk about ways to increase your outdoor living space through the addition of decking in our Guest Columnist section.

Deck Choices for Your
Enjoyment and Return on Investment
Southwest Florida's climate make outdoor living an integral part of daily living year round. Weather you are building a new home or considering remodeling your existing piece of paradise, outdoor living spaces are worth your investment.

The Cost vs. Value Report, from Remodeling Magazine determined that a deck addition project returns an average of about 87% of the original investment - one of the highest values in the survey.
We recommend composite products on our new homes for decks and porches. Florida's unique weather and the salty air of our islands make this an ideal choice over traditional wood decking. Composite decking ensures less maintenance, a longer life span and typically comes with a good warranty. From there, the choices continue:
How closely do you want your deck to resemble wood?
More expensive composites often feature finer details, more colors choices, subtle shadings, superior grain, some producers buff every deck board to remove any resemblance to plastic.
Will your deck be shaded or will it be exposed to the sun?
Darker, solid and very dense composites absorb more heat than lighter tones.
Consider taking home samples in different colors and set them outside to gauge the temperatures each will reach.
Do you want to see your fasteners?
Hidden fasteners provide a cleaner appearance, hiding between tongue-and-grooved boards or clipping together thinner profiles.
Remember, your investment in a deck is going to last decades. Like all decisions to be made when building new or remodeling, try to educate yourself, take your time, and most importantly...enjoy the process.

- Keep the beach dark. Light sources can confuse hatchlings and lead them inland.

Gentlemen...start your Grill
This month's recipe is compliments of Traditions Restaurant in Honor of NATIONAL BBQ Month! . Try this lean, exotic alternative to pork for a change of pace.
BBQ Wild Boar Saddle with Cassis Sauce
Marinade:
3 cups red wine
2 stalks celery
4 gloves garlic, salt and pepper
1 carrot diced
1/2 onion quartered,
1 cup pineapple juice
Pour the red wine, vegetables, garlic and season. Add the meat and refrigerate for 24 hours.
Ingredients:
2 lb. boneless wild boar saddle
1/4 cup sugar
1 cup cassis liquor
1 tablespoon balsamic vinegar
1 cup port wine
1 cup blackcurrant
2 cups demi-glace
2 tablespoon unsalted butter
2 tablespoon olive oil
salt and black pepper to taste
2 tablespoon blackcurrant jam
2 tablespoon olive oil
Preheat the grill to medium heat. Remove the meat from marinade and pat dry with paper towel. Trim the silver skin off of your meat and lightly season with salt and pepper. You may choose to apply some of your favorite rub or fresh herbs, just go easy on it. Then lightly oil and grill for about 2 minutes per side. Transfer to an oven proof skillet, brush with the blackcurrant jam and place in the preheated oven to roast until the meat reaches an internal temperature of 140 F, about 10 minutes.
Remove from oven and set aside to cool for 10 minutes. While you are waiting you can make a quick pan sauce.
Caramelize the sugar in a casserole dish. Deglaze with cassis liquor. Add port wine, blackcurrant, demi-glace and allow to reduce by half over a moderate heat. Add the tablespoon of balsamic, whisk in the butter and remove from heat. Slice the meat across the grain and arrange on a platter. Pour the cassis sauce and blackcurrant over and serve with a side dish such as mashed potatoes and buttered haricot vert (French for green beans). Enjoy!!!
