New Recipe from a Terrific New Place to Dine
Herbed Grilled Salmon for two
Ingredients
2 - 8 oz. pieces of salmon
6 oz. baby spinach
2 oz. jicama
2 oz. cucumber
2 oz. roasted red peppers
2 oz. carrots
6 grape tomatoes
1 oz. toasted sliced almonds
4 oz. ginger lime vinaigrette
Fresh herbs, salt and pepper
Instructions
- Julienne slice jicama, cucumber, red pepper and carrots.
- Toss with ginger lime vinaigrette
- Sprinkle fresh chopped herbs
- Salt and pepper salmon
- Place on oiled hot grill and cook to desired temperature (Medium Rare - about 8 minutes)
- Place baby spinach, grape tomatoes in bowl and top with jicama salad
- Place salmon on top and garnish with sliced almonds
