July is National Ice Cream Month, and no-one knows how to spell ICE CREAM better than Captiva Island's very own Queenie...
Imagine a girl who loved ice cream so much that, for her birthday one year, her boyfriend enrolled her as a student in Ice Cream University.
Clearly she had a passion for ice cream, so could you imagine her reaction when her classmates voted her the 106th class President of the world famous Penn State Ice Cream course? After all, she had been a career dental assistant & was just there "because I love to eat ice cream".
Everyone knows of the "when you know better, you do better" moments that nudge us into action.
Certainly there was no better reason to start her own business. After all, Queenie was in the habit of having Graeter's ice creamshipped all the way from Ohio, to her home in Captiva.
Relying on her Penn State "Cow-to-Cone" education, her former science background, and a respect for use of local ingredients, Queenie opened her very own ice cream business in 1998.
Every ice cream flavor is made in Queenie's tidy, Dept of Agriculture-approved, Fort Myers ice cream kitchen, in neat five-gallon batches using third-generation American-made churns. Milk & cream are provided by Florida's finest Jersey cows.
"Although we are regulated by Florida's Department of Agriculture, we use a standard higher than theirs", says Queenie. "Liz & I strive to make ice cream that we would be proud to serve our Mothers".

The flags were flying at half staff as Sanibel mourned the loss of Francis Bailey, businessman, mayor, pioneer, community volunteer.
His 94 years were an amazing journey seeing Sanibel from a small, isolated farming community to a sought-after resort destination. Francis Bailey has left his mark on our islands, and will be greatly missed.

This delicious sandwich can be carried out or enjoyed with a cool beverage after a long day at the beach!
Beef Brisket Sandwich 6 lb beef brisket (fat removed)
Rub both sides with Texas dry rub
Cover and refrigerate 48 hrs
Texas Dry Rub
1 cup paparika
1 cup brown sugar
˝ cup chili powder
˝ cup cumin
˝ cup garlic powder
˝ cup onion powder
1 tbsp cayenne pepper
1 tbsp black pepper
2 tbsp salt
Place on roasting rack in pan
Add 2 dark beers and cover with foil
Cook in 225 oven for about 4 hrs until meat has reached 175 internal temp
Let cool and cut thin cross grain
To Make Sandwich
Use your favorite hamburger bun and place your favorite coleslaw in bottom top with 8oz. sliced brisket. Take top half of bun and coat with onion jam
Onion Jam
2 large Spanish onions
˝ cup grain mustard
˝ cup Dijon
˝ cup apple cider vinegar
˝ cup brown sugar
sauté onions add remaining ingredients cook till onions are soft
