Please accept my apologies for the delayed newsletter this month. I took a little time off last week and spent a glorious three days in Washington, DC. I lived and worked in our nation's Capitol for 10 years in the 1990's and it will always have a piece of my heart. If you haven't been (or haven't been lately), I highly suggest a visit. The city is cleaner, greener and more accessible than ever and the museums and monuments are both bountiful and beautiful. It had been a few years since my last visit and we hadn't seen a few of the "newer" monuments, so one of the highlights of our trip was to circle the Tidal Basin and visit the FDR and JFK Memorials. On a more local note, I can report that the end of winter is nigh and mud season is on schedule to be about one month early. In fact, things are drying out already . . . but, late March is known for big snow storms (you know the expression, "in like a lamb and out like a lion?"), so keep your eye on the weather report before venturing out. In other news, you may see a slight change to the format of this newsletter. I have migrated to a mobile-friendly format and am still working out a few minor kinks. Vermont Dog Licenses Due April 1st
|
Dog licenses in most Vermont towns are due April 1st. The cost for a neutered/spayed animal is $9 and $13 for an unneutered/unspayed animal. There will be additional fees for late registrations. Contact your town clerk for more information:

Town Meeting Day Wrap-Up

Green Mountain Gourmet - Maple Panna Cotta
|
Maple Panna Cotta
(serves 6)
1 cup pure Vermont maple syrup
3 cups half-and-half or light cream
2 teaspoons unflavored gelatin
½ teaspoon pure vanilla
¼ teaspoon salt
Optional toppings: fresh berries (raspberries are a favorite), whipped cream, small slivers of candied ginger or just about anything you're in the mood for and can add a "brightness" to the sweet maple)
- Using a medium sauce pan (2 quarts), bring maple syrup to a boil and then reduce heat and simmer for about five minutes.
- Being careful that the syrup is not boiling, slowly whisk in the half-and-half/light cream. Whisk gently for a few seconds until completely mixed.
- Remove from heat and let cool to room temperature and then add the gelatin, gently sprinkling it over the syrup and cream mixture. Do NOT stir. Let the mixture stand for several minutes until it looks like the gelatin is dissolved and soft.
- Warm gently over very low heat, whisking gently until the gelatin is dissolved.
- Add vanilla and salt and whisk gently.
- Divide mixture among six 6-ounce ramekins or small bowls. Cover with plastic wrap and refrigerate for at least two hours or until set. This can sit for several hours and up to two days before serving.
- Serve with toppings as desired!
(Note: this recipe can easily be doubled, halved, etc.)

Marchdi Gras (Stratton Meets New Orleans) - Marchdi Gras at Stratton is a southern-style block party in the Village! Enjoy live music, the ice bar, food and drink vendors. Dance through the Village to the sounds of New Orleans jazz & swing from the High & Mighty Brass Band and Groove 'n Dukes. Through the Eyes of the Wolf at Grafton Ponds Nature Center - Find out how wolves, dogs, and humans are different-or alike- at "The Eyes of a Wolf," a science program for youth and adults, presented on Saturday, April 2, by The Nature Museum at Grafton. With wolf expert and advocate Adam Katrick of Wolfgard, NE, learn about canine behavior, then embark on a wolf walk outdoors. It will be held from 10 a.m. to 1 p.m. at Grafton Ponds in Grafton, Vermont. First, Adam will present an hour-long program called "Wolf, Dog, Human: What's the Difference?." Then, the group will embark on "Walk Like a Wolf: Explore the Woods Through the Eyes of a Predator," outdoors on the trails of Grafton Ponds. The program will be held rain or shine.
