Weston's Wilder Memorial Library
Offers Reading Treasure Hunt for Kids

The Wilder Memorial Library in Weston is very excited to offer the Reading Treasure Hunt to preschool through high school aged youth during their summer vacation. The program rewards youth for reading over the summer with coupons to local businesses that can be redeemed for various treats.

Green Mountain Gourmet
This light summer soup honors fresh produce and warm summer nights. It was a hit with the ladies in my book group, so I thought I'd share . . .

Chilled Pea Soup with Mint

  • 1 small onion
  • 2 tablespoons unsalted butter
  • 2 pounds frozen peas (petite)  
  • 5 cups chicken or vegetable stock (or low-salt broth) 
  • ½ cup packed fresh mint leaves
  • ½ cup packed fresh flat or Italian parsley
  • ½ cup non-fat plain yogurt
  • 2-3 tablespoons water
  • 12-18 very small mint leaves (or larger leaves that have been sliced in thin strips (i.e., chiffonade)

1. Finely chop the onion.

2. In a 4-quart heavy saucepan, cook onion in butter with salt to taste over moderately low heat, stirring occasionally, until softened. About 5 minutes.

3. Add peas and 3 cups stock and simmer, uncovered, until peas are tender, 5 to 7 minutes.

4. Stir in mint, parsley and remaining 2 cups stock and simmer on low heat until warmed through. About 7-8 minutes.

5. Remove pan from heat and, with a blender and working in small batches, purée the soup until very smooth.

6. Soup is best served at room temperature so chill in a refrigerator until about ½ hour before your meal.

7. In a medium bowl, wisk water and yogurt until smooth.
8. As you spoon the soup into bowls, add a small ladle of the yogurt mix - you can be creative here and make a fun design.  Add the small mint leaves as an edible garnish!

 

Serves six and can easily be doubled and tripled as needed. Adapted by Claudia from a recipe in the June 1999 issue of Gourmet Magazine.

Wednesday Nights in Weston (through June)  

Join friends and neighbors every Wednesday from February to June at The Inn at Weston for Neighbors Game Nights! Enjoy a delicious, inexpensive, game-night-only pub menu full of comfort food and weekly specials. A reservation costs $5 per person and all funds raised through reservations will be donated to a different local community organization each week. All patrons are entered into a free raffle to win their dinner that night and the winning trivia team's prize is free dessert! Trivia starts at 7 PM sharp and dinner reservations accepted for 6 PM or 6:30 PM. Call (802)824-6789 for a reservation.

Neighborhood Connection Fundraising Dinner at Jake's Restaurant

and Tavern in Londonderry - Join friends and neighbors for a spaghetti dinner to benefit Neighborhood Connections. Adults pay $15 and children under 12 just $7 for a tossed salad, spaghetti topped with Jake's signature sauce, your choice of meatballs or sausage, homemade Italian bread and brownies. The fundraising spaghetti dinner is being offered from 4-9 PM.

2014 Plymouth Strawberry Festival - Bring on the Berries, the BBQ and the Prizes!!! Second Annual Grafton Food Festival - The second annual Grafton Food Festival is a food-lovers event celebrating local food + farms in southern Vermont. Sample local food + beverages and enjoy cooking demonstrations from top chefs. Saturday, July 12 open from 10 am - 6 pm in historic Grafton Village; $10 pp, free for kids 12 + under.
