Happy New Year! While we westerners have been celebrating the New Year for a couple of weeks now, the Chinese will celebrate the Year of the Horse and the lunar new year on January 31, 2014. January 31, 2014 to February 2, 2015 will be the year of the Green (or Wooden) Horse, a time that is symbolic of new beginnings. 2013, the Year of the Snake, was characterized by careful planning, but 2014 will be all about taking action. So, if you've been sitting on the fence carefully analyzing things and thinking about taking action (like buying or selling property), 2014 might be year to do it! Here's hoping you have a wonderful winter and that Vermont is blessed with lots of snow, a busy winter and lots of time for friends and family to gather, play and make new memories.

The new cell tower is operational and can be seen on the north side of Route 100 while driving between Weston and Ludlow. The tower's reach does not extend to Weston village, but cell service is now available on the north end of Weston, parts of Route 155 and north into Ludlow village. |

In addition to the invaluable hard-copy of their trail map, the Vermont Association of Snow Travelers (VAST) has a new interactive map of the state's trail system available online. Did you know that January 20th is National Cheese Lovers Day? This month I'm highlighting a favorite recipe that calls for the use of a sharp Vermont Cheddar cheese. Go ahead and splurge on a good local cheese . . . it makes a difference!
Vermont Cheddar and Beer Soup
- 2 medium leeks (white and pale green parts only), cut into 1/4-inch dice (2 cups)
- 1 cup diced carrots
- 1 cup diced celery
- 2 teaspoons finely chopped garlic
- 1 bay leaf
- 1/4 cup unsalted butter
- 1/3 cup all-purpose flour
- 2 cups whole or 2% milk
- 1 and 3/4 cups reduced-sodium chicken or vegetable broth
- 1 12-oz. bottle beer (an amber ale works beautifully)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dry mustard
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lb extra-sharp Cheddar (rind removed if necessary), grated (approx. 4 cups)
- 4 bacon slices, cooked and crumbled (this can be optional)
- 4 scallions (dark green part only), sliced thinly in rings
Wash leeks in a bowl of cold water, agitating water to remove sand. Using a slotted spoon, lift the leeks out of the water and drain in a colander.
Cook leeks, carrots, celery, garlic, and bay leaf in butter in a 4-quart heavy saucepan over moderate heat, stirring occasionally, until vegetables begin to soften, about 5-7 minutes.
Reduce heat to moderate/low and sprinkle flour over vegetables, then cook, stirring occasionally, 3 minutes. Add milk, broth, and beer in a stream, whisking, then simmer, whisking occasionally, 5 minutes. Stir in Worcestershire sauce, mustard, salt, and pepper.
Add cheese by handfuls, stirring constantly, and cook until cheese is melted, 3 to 4 minutes (do not boil). Discard bay leaf.
Serve sprinkled with bacon and scallions.
