Palm Springs - As some of you may know, Bonnie & Alan Cashman spend some of their days during winter & spring in Palm Springs, CA. LAB5 Fitness Fix
From middle school all the way through high school, I was always the last one picked for teams in P.E. With such bad experiences, I shied away from anything fitness related. As an adult, I decided to really take care of my health, & I began running regularly. But, I needed something more. I decided to join LAB5, & I am shocked with how in shape I have become. LAB5 truly redefined what fitness meant to me. Everyday, I'm looking forward to my next class! Thanks all!

Eat Local Apricot Lentil Soup 
 
Eat Local, 503 Broadway East, Seattle, WA Apricot Lentil Soup

Prep time 15 minutes, cook time 45 minutes. Serves 8
 
Ingredients

3 cups Walla Walla onions, diced

2 cups celery, diced
2 cups carrots, diced
20 ounces dried Pacific Northwest green lentils
8 ounces dried Washington apricots

3 quarts Eat Local vegetable stock

2 tablespoons organic Washington camelina oil, or olive oil
Zest and juice of half of a lemon (local option: one bunch of the herb lemon verbena to taste)
2 teaspoons kosher salt
pinch black pepper
Instructions

In a large stock pot, heat oil and sauté onions until they are translucent, about 5 minutes. Add carrots, celery, lentils, and pluots and cook for a few minutes, stirring regularly.

Add the stock and bring to a boil. Reduce the heat and simmer for 30 to 45 minutes or until the lentils are tender. Season with kosher salt, black pepper, lemon zest, and lemon juice to taste.

Who Knew?!
Which is Healthier?

Apple Cider or Sparkling Cider?
Apple Cider: Typically this less filtered version carries a touch more fiber. Additionally, the spices in cider (cinnamon, nutmeg, & cloves) are antioxidants. 
Dark Meat or White Meat?
 It's a draw: Dark meat has more iron, & twice as much zinc as white meat. But, white meat has about half the fat of drumsticks & thighs.
Graham Cracker or Rolled Pie Crusts?
 Graham cracker pic crusts: these are lower in fat, calories, & can have a little fiber. Whereas, rolled pie crusts contain more butter, sometimes lard---leaving them high in saturated fat. 
Whole or Jellied Cranberry Sauce? 
 Whole Cranberry Sauce: These tart little berries are full of antioxidants & fiber. Jellied cranberry sauce's main ingredient is juice, which is packed with sugar & strained of nutrients. 
Biscuits or Dinner Rolls?

 Dinner Rolls: We all know that choosing multigrain or wheat is best, but even white rolls are a healthier option than biscuits. Biscuits can be packed with more than twice the fat & calories... yikes. Some may even contain a quarter of the recommended daily sodium intake.

Deep inside everyone is the DNA of a Champion that knows it was designed for more and continue to grow. LAB5 is here is to help you achieve the maximum regarding your fitness goals.
 
Everyone may have different fitness goals (i.e. toning, balance, flexibility, range of motion, strength, weight loss, etc.), but it's important for us at LAB5 to help you achieve your desired results. We are here for you!
 
To go farther, you have to be more, way before you'll ever do more. The way you think, the habits you hold, the way you view yourself is all showing up in our daily life. Our staff and trainers are here to tell and show you there is more!
 
December is a month to FINISH what you started and FINISH strong... it's also a time to press through when everyone else draws back.  A champion knows there is a path and they must stay steady, strong and focused on the path.
