Miracles do happen! Just last week I was steering my brain away from how hot and dusty things were around here, holding on to the thought of the one weather forecast of possible early El Nino rains coming in late September. As I walked the growing areas this morning, the soil was spongy with moisture and all the good compost we've worked in. I could almost feel (or hear) the millions (or trillions) of micro-organisms doing their thing ultimately feeding the crops with all the nutrients the plant needs and in turn, what our bodies. You can't get a plate of good nutrient laden food like this from hydroponics or corporate farming. You have to feed the soil that in turn, feeds us. Not all food is created equal. We are so grateful for the rain.

Fresh Local Honey
Blueberry and Tat-Soi Salad with Honey Balsamic Vinaigrette
Easy, refreshing and delicious
1 bunch rinsed tat-soi 1/2 to 1 cup blueberries
1/2 c crumbled Gorgonzola cheese 1/2 c raw pecans
1/2 c chopped celery 1 c sprouts 1/2 c cucumbers
1/4 c balsamic vinegar 2 T honey 1/2 c olive oil
Combine tat-soi, berries, vegetables, cheese and pecans.
Stir balsamic vinegar and honey; slowly add the olive oil while whisking. Season with salt and pepper. Drizzle the dressing over the vegetables just before serving. YUM...
