What's the saying? When it rains it pours? Berry season was a little late this year but coming on now in force. We're sending blackberries, strawberries and blueberries this week and remember, they freeze well for later use if you're not consuming them all.
One of our favorite easy and nutritious summer dinners is a simple Chicken and Strawberry Salad.
For the dressing: mix 1 t sugar, 2 T red wine vinegar, 1 T water, a little salt and pepper in a bowl and then whisk in 2 T of good olive oil for the dressing.
Place your Seabreeze salad, sliced Visalia onion to taste, some nuts (cashews, sunflower seeds, whatever you have on hand) and sliced strawberries into a bowl and lightly toss. Add cooked chicken or marinated tofu cubes, dressing and toss.
Serve on plates with sprouts arranged along the side and sprinkle crumbled blue cheese for a topping. Yum.
Last week we covered saving cooking water and using one gallon for 4 dishes. Our patio plants are in good shape as we place pots needing water on a slated picnic table, pour our grey water with a little fish fertilizer in them and catch the water to be used again in buckets underneath. The water in the buckets will then be used again for the next set of plants needing water. Easy, convenient and satisfying!
